ie the top part...like if you scalded dairy milk and peeled off the top "skin" and dry it? I found some tofu/seitan turkey recipes that use it on top for an analog turkey "skin"...

That stuff is amazing (AKA dried bean curd). I've had a curry veggie chicken where the chicken was actually the tofu skin thickly layered in pieces all in a curry sauce with peas, carrots, and onions.

I recently made tofu skin with shitake mushroom sautee in soy paste. Really great.

Yes, they're the same, and that's how it is made.

You can find it in oriental markets too.
