Tommorow my fiancee and I are throwing our engagement party for our family and friends. What are some easy and delicious appetizer recipes that I can use?

Yes-these are about as easy as they come and quite good.

Roll-ups

2 bricks of cream cheese (softened)
1 jar of mild salsa
2 packs of large (burrito sized) flour torts

Mix the cream cheese and salsa together. Make sure it's evenly combined.

Spread the mixture on the torts, roll the torts up, cut each roll into 1/3s.

These are fab and so easy.

I would highly suggest taking as much help from the supermarket that you can and add yummy personal touches.

For example broil shrimp in chinese five spice seasoning, salt and pepper for about 5 minutes and serve it with an Asian dip. They are good hot or room temperature. Here is the recipe I use.

1 yellow onion
2 tablespoons peeled and grated fresh ginger
1/4 cup fresh lemon juice
3/4 cup white vinegar
1 1/2 cups soy sauce

I also make this dip with feta cheese that is delicious. In a food processor mix feta cheese, fresh parsley and olive oil until it becomes light and fluffy. There is no specific recipe for this because it really depends on how dry the cheese it. I serve it with grilled bread I have brushed with olive oil. If you don't have a grill pan just pop in it the oven to toast.

Another thing that goes over really well that is a piece of cake is grilled chorizo. Soak wooden skewers for about an hour. Slice the chorizo on the bias and skewer them. Again, if you have a grill pan grill them. If not pop them in the oven at a pretty high heat. Whatever setting you have before broil. They will cook up quick, probably two minutes per side. Again these taste good hot or room temperature. Serve them with a honey mustard and a spicy mustard. You can definitely add anything else to the skewer you like, but they are delicios on their own.

Another thing that always goes over well is tuna, ham, egg, and/or chicken salad served with butter lettuce instead of bread or crackers. The key with this is to find a recipe(s) that are delicious! For example this egg salad recipe always goes over well.

6 hard boiled eggs
3 - 4 slices of smoked salmon or lox depending on where you live
2 - 3 tbsp of chopped dill
Mayonnaise, salt and pepper to taste

This pesto chicken salad recipe is really good as well, but you have to remember to season the chicken with salt and pepper really well. It can get bland.

Depending on your time you can go two ways with this. Either buy a very basic vinegarette or make your own. Add it to the food processor with 2 - 3 cloves of garlic a large handful of basil, a sprinkle of salt and pepper and about 1/2 cup of parm. cheese. Toast 1/2 cup pine nuts in a dry frying pan. Sautee 3 chicken seasoned chicken breasts. Let them sit for about 5 - 6 minutes, and then cube them. It is important that the chicken is still warm when you add the vinegarette that way it absorbs some of the flavour. Mix all of the chicken, with about 2/3 of the dressing. Right before you serve the salad mix the final 1/3 of the dressing and the pine nuts. It you add the pine nuts too early they loose some of their crunchiness.

By the way, if you don't have a grill pan make sure you put that in your registry!

If there is a Sams club nearby, cheat!
Easy:
Buy a pack of the small rectangular dinner rolls that come in an aluminum pan. Flip them out of pan and slice through with an electric knife (Crossways, do the whole pan at once). put lunch meat, cheese, mayo, mustard (whatever you like) between the two slices, then put back together. Use your knife to cut out each roll separately. Cute, delicious little mini sandwhiches!
Also,
take a big pack of snickers bars, slice them into approx 1/2 inch sections, shake in a bag with powdered sugar to coat well and serve. Very easy and they'll disappear like hotcakes even if everyone at your party is on a diet. (It's just a little piece, right)

Brie En Croute

1 wheel of brie ( I use the large one)
1 sheet puff pastry, defrosted and rolled out to make a large rectangle
1 jar caramel sauce
1 pkg pecan pieces

Put brie in center of puff pastry and top with caramel sauce and pecans. Pull dough up over the cheese to form a bundle and tie with bakers twine. Cut leftover dough in decorative pieces and place on outside of brie. All of the cheese should be covered by the puff pastry. Mix 1 egg with 3 T water and brush on top of dough. Bake at 375 degrees until puffed and golden. Remove carefully and let cool slightly. When ready to serve, cut into wedges and serve with slices of baguette or crackers.

Take a block of cream cheese and spread jalapeno jelly all over it and place on a plate with crackers. Also my version of Rumiyaki gets eaten up first at every party:
2 cans of whole water chestnuts
1 lb of bacon cut into quarters
1 -2 bottles of BBQ sauce
Wrap each water chestnut with a piece of bacon and secure with toothpick and place in casserole dish. Broil until bacon is cooked then cover with BBQ sauce and bake at 400 degrees for 20 minutes.A bit labor intensive but yummy!

Use pretzel sticks on chunks of cheese,meatballs with BBQ sauce,olives stuffed with peanuts,crackers with pineapple spread,relish tray&ranch dressing for dip.Remember when making the appetizers the pretzel sticks are eaten not throwed away later.Congratulations.

2 Pounds Sausage
2 Cups Shredded Cheese
4 Cups Bisquick

• Mix and form into balls
• Bake @ 350◦ for 25 minutes

Crab Spread

8 oz. pkg. cream cheese, softened
6 oz. can crabmeat, drained and picked over
1/4 cup mayonnaise
3 Tbsp. finely chopped pecans
1 Tbsp. horseradish
PREPARATION:
Combine all ingredients and mix well. Chill several hours to blend flavors. 1-1/2 cups or 24 servings
