1 Package of chocolate chips (the Eileens cheap kind are actually vegan, but check the ingredients for ones in your local store.)
1 "juice box" of soft tofu.
1 Graham cracker pie crust.
Melt 2/3 package of chocolate chips, blend with the soft tofu and dump into the pie crust.
Refrigerate for a couple of hours and you have a rich vegan chocolate pie.

GRAHAM CRACKER PIE CRUST:
2 cups graham cracker crumbs (about 16 whole crackers)
6 tablespoons soy margarine, slightly softened
1 1/2 pounds silken tofu
1 cup canned or fresh cooked pumpkin
1 1/4 cups sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
12 ounces soy cream cheese
1 tablespoon vanilla extract
Make the graham cracker crust: In a food processor or blender, process the graham crackers on high speed until they are finely ground. Add the margarine and pulse until the mixture resembles coarse crumbs. Pat the mixture into a thick layer in the bottom of an 8-inch springform pan, or thinner layers in 2 (9-inch) pie plates.
Make the filling: Have all the ingredients at room temperature. Preheat the oven to 325 degrees. In a food processor or blender, puree the tofu until smooth. Add the sugar, spices, soy cream cheese, and vanilla and process until smooth. Scrape down the sides as necessary.
Pour the tofu mixture into the prepared pie crusts and bake for 50 minutes, until the cheesecake mixture is firm.
Turn the oven off, leaving the cake in the oven for 1 hour. Remove and cool to room temperature. Refrigerate the cheesecake overnight. Serve slightly chilled.

I just use olive oil, a little basil, salt and pepper and sautee it in a fry pan or wok. Then sometimes I'll add soy paste or soy sauce. The secret of cooking soft tofu this way is not to stir it, you use a spatula and slowly plow through it to mix it so the tofu doesn't break up.
To this mixture you can add various vegetables, mushrooms, etc...

Here are some recipes. Some of them don't specify soft tofu...I just imagine that is what to use.
Tofu Pumpkin Pie
Ingredients (use vegan versions):
1 can (16 ounces) pureed pumpkin
* 3/4 cup vegan sugar
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cloves
* 1 package (10-12 ounces) silken/soft tofu, processed in blender
until smooth
* 1 9-in unbaked vegan pie shell
Directions:
Preheat oven to 425 F. Cream the pumpkin and vegan sugar. Add salt,
spices, and tofu, mix thoroughly. Pour mixture into pie shell and bake
for 15 minutes. Lower heat to 350 F and bake for another 40 minutes.
Chill and serve. Don't use the low fat tofu, then the pie tastes like
it was made with tofu. This pie is soooo yummy, it will fool almost
anyone. I made it last Thanksgiving for my whole family, I am the only
one, and everyone asked for seconds. They begged me to make another one
for Christmas dinner. Top with non dairy topping and it will fool any

Tofu rice croquettes

Ingredients
1 cube vegetable stock
1 tsp curry powder
50 g white rice
2 eggs
750 g tofu

50 g bread crumbs
Directions
Boil the rice in 2 time its volume water until soft and cool down a bit. In the meantime, chop the onion and bake in 1 Tbs oil until tender. Separate the eggs. Roll them through the beaten egg white and then through the bread crumbs.Deepfry both sides in hot oil until golden brown.

Tofu chocolate custard
Take a block of silken tofu, drain the liquid, add it to the mixer with a 1/2 cup cocoa powder and 1c rice syrup or honey, to make a custard, then i pour it into a graham cracker crust and top with fresh berries, let chill in fridge for at least 2 hours...

yield: 6 burgers
Ingredients:
1 lb tofu
1/2 cup whole wheat flour
3 Tbsp. nutritional yeast
2 Tbsp. vegetable bouillon powder
pepper to taste
2 Tbsp. soy sauce
1/4 cup (or more) sesame seeds
1 small scrubbed potato
1/4 tsp. (or more) garlic powder
onion powder to taste, or one small onion
Grind the tofu, potato and onion (if using) in a food processor. Don't let it get too fine. Mix in remaining ingredients, shape into burgers and bake at around 350 degrees on a very lightly oiled cookie sheet for 15-20 minutes, turning once. They can also be fried.

1/2 medium ripe banana
1/2 cup orange juice
1/4 cup honey
3/4 cup fresh or frozen strawberries or fruit of choice

Blend together tofu, banana, orange juice, honey, and fruit until smooth. Add ice, then continue to blend until creamy. Serve immediately.

Tropical Smoothies
· 1 cup sliced banana
· 1 cup frozen pineapple chunks
· 2/3 cup orange juice
· 2 Tbsp. sweetened flaked coconut

* 1oz chopped walnut
