I don't know if it's still in print, but there's a great cookbook called Vegetarian Express by Nava Atlas (see http://www.amazon.com/Vegetarian-Express-Tasty-Healthy-Minutes/dp/0316057401/ref=sr_1_4/104-9510317-9355141?ie=UTF8&s=books&qid=1175281812&sr=1-4 ) that has lots of kid-friendly vegetarian meals. One of the recipes that my niece and nephew (and husband) love is Peanut Butter Spirals. It's available online at http://www.ivu.org/recipes/pasta/peanut-butter-spirals.html

The recipe itself is:

10 Ounces spiral or rotini pasta
1/2 cup peanut butter
3/4 cup water or vegetable stock
3 tablespoons soy sauce
2 tablespoons white-wine vinegar or rice vinegar
1 tablespoon honey or rice syrup
1/2 teaspoon ground ginger
1/2 teaspoon chili powder
1 1/2 cup frozen green peas, thawed

1. Begin cooking the pasta

2. Combine the remaining ingredients, except for the peas in a blender or food processor fitted with a steel blade. Process until smooth

3. When the pasta is just about done, toss the peas in to warm them, then drain and transfer them to a large serving bowl. Add the sauce and toss well.

Helpful tip: The peanut butter sauce thickens as it stands. Mix in more water if the dish sits for a while before serving, or before serving leftovers the next day.

You can use any kind of peanut butter you like, including homemade or organic, to control the fat, sugar and calories in the recipe.

The pygmies of Eastern Borneo have a number of recipes that feature child vegetarians, but you would be risking arrest should you try to boil a minor in this country.

yes, my 12 year old is a veggie. She likes curried cous cous (or any other flavor for that matter) rice stuffed bell peppers, roasted in the oven in veggie stock, stuffed tomatoes, veggie kababs, mac and cheese, brocolli cheese caserole, spanish rice, homemade veggie soup, pasta with spagetti or alfredo sauce, battered mushrooms and okra with spicy cocktail sauce, fondue, french bread pizza with green peppers and onions, tortellini or raviola with pasta sauce, pupusas, bean and cheese tacos and burittos, fruit kababs with yogurt dipping sauce, grilled pinapple, apples and pears with caramel dipping sauce-the list is endless. Sorry I dont have recipes, but I just toss stuff in a pot until it looks right, but I hope this gives you a few ideas. We have been veggies for years, and her friends love to eat at our house-they never even realize there is no meat. Good luck

I have two kids and for a snack believe it or not they love spinach dip with carrots any fruit and they love cottage she and fruit. They love fruit and peanut butter also. And there favorit meal is grill cheese or mac and cheese

THERE IS ALWAYS THE MACARONI AND CHEESE, FAVORITE,CELERY STICK SLICED 2 INCHES DAPPED WITH PEANUT BUTTER,,POTATO CROQUETES WITH LITTLE BROCCOLI PIECES...GRILLED CHEESE ON OATMEAL BREAD,,CARROT SOUP MADE WITH VEGGIE BROTH...MILLET PILAF WITH BROCCOLI FLOWERS SAUTED
