Chinese Style Spaghetti
INGREDIENTS:
1 pound spaghetti or noodles
2 tbsp sesame oil
1/4 cup soy sauce
1 cup snow peas
1 cucumber, diced
4 green onions, sliced
2 tbsp fresh parsley, chopped
2 tbsp red wine vinegar
1 tsp dry mustard
1 tsp hot chili oil
PREP:
Cook the spaghetti or noodles in water until they are soft, around 10-12 minutes. Drain.
Whisk together the sesame oil and soy sauce and toss with spaghetti.
In a microwave or steamer, gently cook the snow peas for just 2 minutes.
Whisk together vinegar, mustard and chili oil and toss this with the snow peas, cucumber, green onions and parsley until well mixed. Toss together the veggies and spaghetti until well combined. Enjoy hot or cold.

How about fresh rolls (sometimes called spring rolls, although those can be fried)?
INGREDIENTS:
Spring roll wrappers
1/2 cup bean sprouts
1/3 head of green cabbage, chopped
5 green onions, chopped
1 cup thin noodles, pre-cooked (use rice, Chinese or bean thread noodles)
1/4 cup fresh herbs (use cilantro, basil or mint, your choice)
1/4 cup carrots, grated or julienned
1 tbsp lime juice
1 tbsp soy sauce
1/2 tsp fresh ginger, grated (optional)
PREPARATION:
Toss together all ingredients together except wrappers in large bowl. Submerge wrappers in hot water until pliable, about 15 seconds. Place about 2 tablespoons of mix on wrapper and roll.
You can vary ingredients - I often use lettuce instead of cabbage, and julienned cucumber instead of bean sprouts. You can also add tofu (fresh or cooked) if you like. I think they work best with rice noodles that have been soaked until they're soft, also. For herbs I like a combination of basil and mint. These are fun to make and easy to eat, although they don't keep well since the wrappers dry out. You can make a dipping sauce if you like, but I think they're best without it.

Cold Asian Rice Salad with Veggies
I
NGREDIENTS:
4 cups cooked brown rice, chilled
1/4 cup peanut oil
1 tsp salt
1/2 tsp pepper
1 tsp sugar
1 tsp sesame oil
1 carrot, diced
1/2 cup chopped snow peas
1/2 cup corn kernels
1/4 cup rice vinegar
1 stalk celery, diced
1/2 red bell pepper, diced
3 green onions, chopped
2 tbsp chopped fresh parsley
PREPARATION:
In a small mixing bowl, combine the peanut oil, salt, pepper, sugar and sesame oil. Stir until the sugar dissolves, then pour over the rice in a large mixing bowl. Toss gently to coat, then set aside.
Steam the carrot, snow peas and corn for one minute.
Drain, then stir the vegetables into the rice.
Add the remaining ingredients and stir to combine. Serve chilled.

IDLI:- South Indian(Asian) food.Pure Vegan:
Advantages:-(1)0% Fat(saturated/unsaturated)-& Cholesterol (2) Steam cooked.
Three measure(any measure-weight etc) par boiled Idli rice-available in any good Indian Grocery shop--one measure dehusked (white) black gram.Soak both seperately in water overnight.Next day seperately grind in an electrical Mixie-(Preferably in light weight electrically operated stone IDLI grinder for best taste) till both are nicely(micronized) ground-dough must be of thick consistency with just sufficient water-Mix both and add salt to taste and remix uniformly.Some prefer to add very,very,very small amounts cumin seeds and black pepper (full-not ground)-Allow to ferment(some add very small amount of Baker's Yeast to ferment) at about 30 degree(South Indian room temperature)Celcius for about 12 hours.Mix well and add 4-5 table spoons of dough in each trough of IDLI plate-steam cook in a cooker(with out pressure)-remove cool and serve with (oil free) ground paste of dehusked puffed Bengal gram,peeled onion,a little tamarind,cut carrots,salt to taste,a few pieces of ginger -if necessary 1 or 2 very small size green chillies.Very tasty-An adult can take 4 to 5 idlis with side dish at a time-small children put on solid food(from 2 years above) can take 1/2 to -1or 2(according to age) idli -for children side dish-butter-sugar syrup-honey etc-no spices.Very easily digestable.

I toss whole wheat spaghetti and a variety of cooked until tender crisp veggies (broccoli, water chestnuts, bean sprouts etc) in a homemade peanut sauce.
