I am inviting a friend from overseas for lunch. I would like to prepare and serve an one-dish meal with a refreshing drink for him.Any ideas?

One dish meals for lunch can be quite heavy. If they aren't they tend to be "feminine."

Here are a few one dish meals that are pretty good, but they are heavy dinner foods.

Pot roast with veggies
Mexican Pie
Ham and Potatoe Casserole

Here is a recipe for a pasta salad, that might seem a little dainty for a guy, but it is filling and delicious!

1 box of tri colored pasta
1 bottle of zesty Italian dressing

From here you can go anywhere. My usual ingredients are cubed cheese, diced onions and peppers, a small can of olives and cubed pepperoni. But this is what I make for a side salad.

But for something more substantial you can make it Traditional American: Diced grilled chicken, cheese, broccoli, shredded carrots and diced cucumber.
Asian: Asian five spice shrimp, shredded carrot, bean sprouts, diced cucumber and chopped peanuts. Change the dressing to an asian vinergarette.
Italian: A mix of italian meats, olives, tomatoes, artichokes and grated parmigiano (not the crumbly kind).

You get the idea. Anyway, for drinks I would suggest a making fresh lemonade. That way you can spike it with a good vodka if the time comes up.

A one dish meal might include all sorts of things from stir-fry to beans and rice. Something you might want to consider, though, is a nice hearty soup. Served with a good artisan bread, crisp salad, and cheese and fruit, it would make a nice alternative:

Chicken Tortilla Soup

2 boneless, skinless chicken breasts (season with garlic powder, salt, pepper and bake for 40 minutes in 350 degree oven)
1 container organic Chicken broth
1 15 oz can diced tomatos with onions and diced green chili
1 can diced green chilis
1 can black beans (drained(
1 cup sweet corn
1 tsp salt (or to taste)
1 tsp fresh ground pepper
2 T Cumin
2 Tsp Chili Powder
Crisp Tortilla Strips
sour cream
avocado

Blend chicken broth with tomatos and add chicken, spices and beans. Simmer for 30 minutes and add corn. Simmer for another 30 minutes. To serve, in each bowl add tortilla chips, sour cream, and top with avocado (if desired). This soup is good with a crisp green salad with a Ranch-Salsa dressing and either warm flour tortillas or french bread.

Guys, no matter where they're from, always like pizza. You could make an interesting home-made pizza...maybe with garlic and chicken or something like that. Or, if you don't think he'd be into pizza, you could make a quiche with veggies and cheese or whatever.

it depends where he's from and what he likes, but go with Pasta and a ready to eat sauce....that's filling as a 1 course meal...drink beer or pepsi or whatever he likes
