For some odd reason I cant seem to find the answer anywhere!

CHELO KEBABS

The chelo kebab is the national dish of Iran. Served on skewers over a bed of rice, this recipe is basic, yet full of flavor. I prefer to grill this over a charcoal grill over a gas grill because the flavor is much better. If you do not have a grill, use the broiler in your oven.

INGREDIENTS:

1 lb. ground beef or lamb
1 teaspoon cumin
1/4 teaspoon black pepper
1 large onion, chopped

PREPARATION:

In a mixing bowl, combine all ingredients. Combine well using wooden spoon, or with your hands. Mixing with your hands allow the mixture to be combined better.

Take about 1/4 meat mixture and make into a ball.
Place ball through flat skewers, and shape into square cigar-like shapes. Repeat with remaining meat.

Place on grill and cook about 4-6 minutes each side, until meat is no longer pink and done.

Serve over a bed of white rice and pita bread. Serve with a salad, like a fattoush or tabbouleh.

The Iranian national cuisine is justly considered to be one of the most ancient cuisines in the world.

Traditionally, in Iranian cuisine there are many dishes made from dairy products. The most favorite of them is yoghurt - mast.

All provinces of Iran have their own dishes. However, the national dish is rice prepared in several special ways.
In Iran rice is served in two basic ways, either as polo or chelo.
Chelo is the steamed white rice cooked separately and over which different types of sauces or meats are served.
Polo, often called pilaf in the West, is the name applied to rice with which other ingredients are mixed in the cooking process.

Khoresh (Sauce for Pilaf) Persians almost always eat rice with khoresh.

Chelo Kabab is rice with broiled lamb.

Abgusht (Lamb Stew), which in Persian means the water of the meat, is one of the most popular dishes in Iran.

Ash (Iranian Soup) It can be a very simple meal, prepared inexpensively, or it can be a rich meal if one knows how to spice it properly.

Dolmeh is any kind of vegetable and fruit stuffed with meat and rice.

Dolmeh Barg, literally meaning stuffed leaves, is the name for stuffed grape leaves.

Kufteh Tabrizi (meat balls). Iranians make a variety of meat balls and use them in soups.

Kuku (Casserole Dish) is a type of dish usually made of vegetables and eggs.

The national dish of Iran is a thick soup called an Ash. There are lots of different types of Ash made of lots of different things, for example,

Ash-e Anar – pomegranate soup
Ash-e Mast – hot yogurt soup
Ash-e Reshteh – noodle soup
Ash-e Tarsh – dried fruit sour soup
Ash-e Gandam – Wheat Soup


Ash can be very simple to make but with some spices is delicious.

I would think it's Ghormeh Sabzi. It's like a stew of meat, red beans, certain vegetables and onions. Served over rice. It is sooooo good.
