i need a hispanic recipe that does not have meat in it or a website would be helpful.

Green Cheese Enchaladas

About 2-3 lbs of green tomatillos
About 2or4 Med. Jalapenos
3 cloves of garlic
Salt to taste
Family pack of corn tortillas
Mexican Melting Cheese About 5 lbs ( alot of cheese is good)
Oil
Baking Sheet ( non-stick is best)
Two Large bowls
Large quart pan
large skillet

Boil Green tomatillos and jalapenoes till about almost busting.. throw boiled tomatillos and pepers into blender with garlic cloves blend completely pour into a large bowl....
heat oil in a skillet.....
Shread Cheese into a bowl...
lightly fry tortillas till lightly crisped....
drain tortillas then dip in to green sauce....
place on baking sheet place some cheese on tortilla then roll...
continue till baking sheet full....
If any extra sauce and cheese pour on top of enchaladas
bake in oven for about 10 mins or until cheese is melted
then enjoy

Gazpacho soup
* 2 Roma (plum) tomatoes, quartered
* 1 large cucumber, peeled and halved
* 1 onion, peeled and halved
* 1 cup green bell pepper, diced
* 1 (4 ounce) jar diced pimento peppers, drained
* 2 (12 fluid ounce) cans tomato juice
* 1/3 cup olive oil
* 1/3 cup red wine vinegar
* 1/4 teaspoon hot pepper sauce
* 1 1/2 teaspoons salt
* 1/8 teaspoon ground black pepper
* 2 cloves garlic, minced
* 1/2 cup croutons
* 1/4 cup chopped fresh chives

1. In a blender combine one tomato, half the cucumber, half the onion, a green bell pepper quarter, the pimento and 1/2 cup tomato juice. Blend at high speed for 30 seconds to puree the vegetables.
2. In a large bowl mix the pureed vegetables with remaining tomato juice, 1/4 cup olive oil, vinegar, hot pepper sauce, salt and ground black pepper. Cover mixture and refrigerate until it is well chilled (about 2 hours).
3. Meanwhile saute the croutons in oil and add the garlic; transfer to a small bowl.
4. Place remaining chopped tomato, cucumber, onion and green bell pepper in separate bowls. Serve soup in chilled bowls, garnish with chives, and serve chopped vegetables and croutons as accompaniments.

Arroz
* tablespoons vegetable oil
* 1 cup uncooked white rice
* 1 onion, chopped
* 1/2 green bell pepper, chopped
* 2 cups water
* 1 (10 ounce) can diced tomatoes and green chiles
* 2 teaspoons chili powder, or to taste
* 1 teaspoon salt

1. Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender.
2. Stir in water and tomatoes. Season with chili powder and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.

TAKE A RED ONION SLICE THIN SAUTE A LITTLE IN OLIVE OIL...MINCED IN BLENDER OR MASH 5 CLOVES OF GARLIC BY HAND.WHEN YUCA IS SOFT TAKE OUT SERVE WITH A LITTLE GARLIC AND A LITTLE BIT OF ONION....DRIZZLE SOME MORE OLIVE OIL........A SIMPLE YELLOW RICE WITH RED BEANS........TAKE 1 CUP OF RICE,1 CAN OF RED BEANS. SAUTE A CHOPPED 1/2 A GREEN PEPPER ..ONION,2 CLOVES OF GARLIC,SALT ,PEPPER TUMERIC,CILANTRO..., AFTER SAUTEING IN OLIVE OIL ADD THE RICE AND BEANS,AND 11/2 CUPOF WATER., STIR WITH SPOON, LET WATER EVAPORATE COVER THE POT LOWER THE FLAMES,IT SHOULD BE DONE IN2O MIUTES DO NOT REMOVE THE TOP UNTIL 20 MINUTES PLEASE .......THIS IS FROM PUERTO RICO.NAMASTE
