My options are
Roasted veggies with garlic and paprika OR
Home-made hummous with various dipping bits!(pitta,carrots and cucumber).

As long as you ate well the rest of the day, I see no issue with a plate full of veggies. Sounds good. Sometimes I have light meals like this for dinner. I would add a whole grain roll to it.

Have the hummous as a starter and then go for the roasted veggies. Put some torn fresh basil in with the veg. Yum!

You can't go wrong with a big mixed green salad and some vegan salad dressing. There are so many vegan salad dressings available at the store, it is not even funny.

Neither sounds very substantial! U need a proper meal, not bits and pieces! I had pie, mash and beans! YUM!
