I like to do themes just so I have structure for a multi-course meal. The theme can be ethnicity, or season, or holiday, or anything you want:
So here are some thoughts:
a) ITALIAN THEME: caprese salad, lasagna; tiramisu
b) INDIAN: samosas; chicken biriyani; mango ice cream
c) SPRING: asparagus soup; poached salmon on salad greens; strawberry shortcake
d) THE LETTER C: calamari, chicken cacciatore, carrot cake
e) VEGAN: carrot ginger soup; black bean and sweet potato chili on couscous; fruit salad

Fondue always is a big party pleaser. First course: You do cheese served with varieties of breads and veggies. Second course: You put the oil in and you do meats and vegetables. I would serve a small baked chicken breast to each person.Then I would give a small bowl of broth with muchroam and green onion to taste.Then dessert I would serve a small piece of cheese cake with a scoop of vanilla ice cream and a strawberry on the side.The is a 3 course meal your friends will love.

Make it nice and simple.
Start out with a nice cup of Minestrone Soup, with some easy italian salad.
Something like a Chicken Cordon Blue (Baked chicken which you butterfly and stuff with Cheese (mozerella) and Ham (sub Pershuto(spelt horribly I know) as your main.
with cus cus and maybe some light steamed veggies.
Finish it up with a Nice big Fruit tart. (lots of fruits no choco, usually a lot healthier)
