I love this one, courtesy of my great aunt. Pistachio pie.
1 Keebler graham crust
1 (15 oz.) can crushed pineapple slightly drained
1 pkg. pistachio pudding mix
1 container of Cool Whip
Stir together the pineapple and pudding mix. Let stand for about 10 minutes, fold in the Cool Whip, dump it into the crust, and chill for 4+ hours.
It's so easy, but it's luscious and light and fluffy. And good!

Strawberry Ameretti Parfait
Slice strawberries - put aside
Coarsely crush ameretti cookies (found in an Italian market)
Mix about 1/4 c. balsamic vinegar with just enough brown sugar to sweeten it a bit.
Whipped cream - (make your own it is so much better tasting.)
Use a daiquiri or martini glass and begin layering the ingredients.
Start with the strawberries,then the ameretti cookies
DRIZZLE the sweetened balsamic mixture over berries and cookies, then add the add the whipped cream.
Repeat this process until the glass is full finishing with whipped cream.
Garnish with a "strawberry fan" and a few cookie crumbs
To make the strawberry fan hold the berry vertically and slice almost to the top of the berry but leave the stem and leaves on it. Gently spread out the strawberry slices and that's it.
This is difficult to make ahead of time because f the whipped cream.
This dessert has a great presentation and is yummy!

Fresh Fruit Pizza with Lemon Curd

The lemon curd not only holds the fruit in place, it serves as an exquisite anchor for all the flavors. You may have never imagined such a pizza. Now you'll never forget it. It's best served the day it's made.
RECIPE INGREDIENTS
One (18 ounce) package refrigerated sugar cookie dough
Cooking spray
2 tablespoons seedless raspberry jam, melted
3/4 cup Lemon Curd
2 cups fresh raspberries
2 cups blackberries
1 cup sliced strawberries
1 plum, sliced
2 teaspoons sugar
RECIPE METHOD
FOR THE SUGAR COOKIE DOUGH:
Preheat oven to 350 degrees F.
Press dough into a 12-inch pizza pan coated with cooking spray. Bake at 350 degrees F for 12 minutes or until golden brown. Cool completely on a wire rack.
FOR THE FRUIT PIZZA:
Preheat broiler.
Spread jam over crust. Spread Lemon Curd over jam; arrange raspberries, blackberries, strawberry slices, and plum slices on top. Sprinkle sugar over fruit; broil 3 minutes.

This is my favorite southern desert!! Hint, serve with a scoop of Vanilla ice cream.
Ingredients
1-1/4 cups flour
1 cup sugar
1/2 cup light brown sugar
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup butter or margarine
4 cups sliced fresh peaches
1 Tbsp lemon juice
1 tsp lemon peel
Instructions
Preheat oven to 350 F.
Combine 1 cup flour, 1/2 cup sugar, salt and cinnamon. Cut in butter with 2 knives until coarse (resembling corn meal). Combine peaches, lemon juice, lemon peel, 1/2 cup sugar and 1/4 cup flour. Spoon into greased 9-inch square dish. Sprinkle flour mixture over peaches. Bake covered for 15 minutes. Remove cover and bake 35 to 45 minutes longer.
Yield: 8 servings

Lemonade pie
2 prepared graham cracker pie shells
1 can frozen lemonade or limeade (large)
1 1/2 small tubs of whip topping - thawed
other half for topping
1 can of sweenten condense milk
Mix the whip topping, milk and frozen lemonade together, pour into pie shells and freeze for 3 to 4 hours, better if overnight. Use the left over topping to top on the pie slices.
A sweet and refreshing dessert.

For chocloate lovers:
Flourless Chocolate Cake
⅓ c. water
½ c. sugar
½ c. unsalted butter, cut in tablespoons
12 ounce bittersweet chocolate, chopped
⅓ c. orange liquer
6 eggs
whipped cream, for garnish
fresh raspberries or raspberry coulis, for garnish
Preheat oven to 325° F; prepare an 8" round cake pan by spraying with non-stick cooking spray and lining with a round of parchment cut to fit the bottom of the pan.
Bring water and sugar to a boil, stirring to dissolve sugar.
Off heat, add butter and chopped chocolate. Let sit 2 min. to melt; stir to smooth.
Whisk in Liqueur then the eggs, one at a time. Pour batter into prepared cake pan, place it into a roasting pan, then add war water to the toasting pan. Bake cake 40-45 minutes. Cool, unmold, and serve with whipped cream and raspberries or raspberry coulis.
Notes:
If using a brandy, use only T. as the alcohol content is high. You don't want the cake to taste "boozey".
Equipment:
8" round cake pan
parchment paper
non-stick cooking spray
roasting pan large enough for a bain marie
Raspberry Coulis (to garnish Flourless Chocolate Cake)
2 cups raspberries
⅓ cup sugar
1 tablespoon balsamic vinegar
Place 2 cups raspberries, 1/3 cup sugar, and vinegar in a food processor, and process until smooth. Strain through a sieve into a bowl; discard seeds. Cover raspberry mixture, and chill.
Great for summer:
Warm Peaches Baked in Parchment
6 peaches, very ripe
2 tablespoons dark rum
3 teaspoons brown sugar
6 teaspoons unsalted butter, softened
2 vanilla beans, seeds scraped and re
12 pieces star anise, whole
vanilla ice cream
Preheat oven to 450 degrees. Slice peaches into 1/2" wedges, sprinkle with the rum, set aside.
Combine butter with brown sugar and vanilla bean seeds.
Add 1/6 of the peaches to the center of the parchment heart, add 2 pieces of star anise to each package and 1 teaspoon of the vanilla butter.
Start at center of the heart and fold while creasing well to enclose the package. Just before serving, bake 4 minutes. Open package and serve over vanilla ice cream.

Chocolate Buttermilk Brownies
One cup unsalted butter
One-quarter cup cocoa
One cup water
Combine in saucepan, bring to a boil, and then cool.
Two cups sugar
Two cups flour
One-half teaspoon salt
One teaspoon baking soda
Sift dry ingredients and then combine with cooled cocoa mixture.
One-half cup buttermilk
Two eggs, beaten
One teaspoon vanilla
Red food coloring, paste or drops (4 drops)
Combine and then add to batter, mix, and pour into cookie sheet. Bake at 350° for 20 minutes.
Frosting
One-half cup butter
One-quarter cup cocoa
One-quarter cup buttermilk
Combine and heat in pan until warm.
One pound powdered sugar
One teaspoon vanilla
Dash salt
Add these ingredients to frosting cocoa mixture and blend. If necessary, add more buttermilk to thin frosting a bit. Spread over warm brownies.
