Yes, you could give a recording a try. However, it's probably her adenoids that are causing the problem.
Ohhhh, gosh...been there, done that one. My grandson also had the issue and they ended up taking out his adenoids. It went along with the tonsillectomy he had. He also has allergies. Then there was my sisters son who had the same difficulty. Kids are just famous for that.
The most important part that was missing was the 'stop breathing' which she does not do. However, I would still make the recording so the doctor can check it out and give you a better diagnosis than I can. I did work for Ear, Nose and Throat specialists (4 of them) and an allergist. (I'm a former CMA, who turn tail to law enforcement)
I was just wondering? Have you ever heard her snore? That would be a more certain sign of sleep apnea; but then, when their adenoids are bad, kids do that as well.

Yes a 11 year old can have sleep apnea...you should get her in to the doctors because he may want to do a sleep test on her. Hope this helps.

It could be lots of things. Chances are it may be something. I would go to the doctor for sure. Maybe they can tell you what to do. If theres nothing else your not telling us and shes health otherwise then this is probably nothing but without treatment it may get worse.

it's not sleep apnea unless she stops breathing repeatedly during her sleep.
i would take her to the doctor and have them check out her nose and throat to make sure that there's not something obstructing her airways.
