Rice Pancakes, Thailand-Style:

20 min 20 min prep
12 pancakes

2 large eggs
1/2 cup low-fat coconut milk
1/4 cup chopped cilantro
1 tablespoon minced ginger
2 cups cooked rice
1 cup chopped green onions
1/2 cup chopped unsalted peanuts
1/4 cup all-purpose flour
1/8 teaspoon sriracha sauce (optional)

1. Whisk eggs and milk in large bowl. Add remaining ingredients, plus some salt and pepper, if desired.
2. Spray large nonstick skillet with cooking spray. Drop 1/4°C batter into the skillet and smooth it down with a spatula. Cook 4-5 minutes, until bottoms are golden-brown, then flip pancakes. Let cook for another 3-4 minutes, then remove when both sides are browned and crispy. Repeat with remaining batter.

Roasted Thai Chicken

INGREDIENTS:
6 chicken thighs
1/3 cup lime juice
2 stalks lemon grass, pounded
2 hot red chilies, seeded and chopped
3" piece ginger root, peeled and minced
1 onion, chopped
4 cloves garlic, minced
1/4 cup honey
1 tsp. salt
1/8 tsp. white pepper

PREPARATION:
Place chicken pieces, skin side up, in baking dish. Cut several slashes across each piece with a sharp knife, cutting through the skin into the flesh.
In small bowl, combine lime juice, lemon grass, chilies, ginger, onion, garlic, honey, salt, and pepper and mix well to blend.
Pour this mixture over chicken, making sure some of the mixture settles into the slits cut into the chicken. Cover and marinate for 1-8 hours.
When ready to eat, preheat oven to 400 degrees F. Place pan in oven and roast for 35-50 minutes until chicken is thoroughly cooked. Serves 4-6

One of my favorites is Pad Ga Pow Gai...Spicy chicken with garlic, chili and Thai Basil over rice.

For 4 people take one pound of ground chicken, 3 cloves of garlic, 8 Thai chilis and several sprigs of Thai Basil and 1/2 cup of chopped onions and a little oyster sauce.

Mince the garlic and chilis together and mix them. In a wok or large skillet add a couple of tablespoons of oil and heat to almost smoking. Add the garlic chili mix and sautee for one minute. Then add the onion and cook for another minute. Then the chicken and cook until done. Add a tablespoon of the oyster sauce and the basil.

Serve over rice with garnish of spring onions and sliced cucumbers.
