You absolutely must have spam musubi! (Essential!!) If you've never made it before, there are pleanty of sites to show you how to prepare it!
Other yummy things are pork hash, manapua, mochi, and anything wrapped in nori (seaweed)!
(By the way.. these are "finger foods" people eat all the time in Hawaii if you are going for authentic hawaiian style foods)

We spent a year in Honolulu and my favorite dish was the poke tuna.
Here's a recipe:
4 cups ahi, diced
1/2 cup onion, minced
1/4 cup green onion, minced
1 cup soy sauce
2 tablespoons sesame oil
3 tablespoons white truffle oil
1/2 tablespoon sambal olek/
salt and pepper to taste
If your guests are not into fresh fish, you may opt for something cooked like coconut shrimp:
24 large raw shrimp, peeled
1/2 cup all-purpose flour
2 eggs slightly beaten
3 cups shredded coconut
24 - 6 inch wooden skewers
Or, Macademia Hummus
1/2 cup roasted macadamia nuts
2 cups garbanzo beans, drained
3 Tbsp. Oil (any good olive oil works or macademia oil)
3 Tbsp. fresh lemon juice
3 Tbsp. water
1/2 tsp. minced garlic
10 medium basil leaves
Salt and pepper to taste
Crispy Pitas (recipe follows)

4 large pitas
1 tsp. lemon pepper seasoning
1 tsp. ground cumin
2 Tbsp. Macadamia Nut Oil

Borders has a book that is all finger foods for like $9.99. I just bought it last week. I bet you could get it online. It is divided by region too. It is a big book.
