So very delicious and almost ***fat free***

1 Angel Food Cake (broken into pieces)
1 Can drained crushed pineapple
1 Cool whip (fat free)
4 Bananas (sliced)
1 pkg Frozen Strawberries (unthawed)
Optional but adds the fat is... Coconut or chopped nuts

Tastes sinfully rich and fattening *** but is not ***

Well you don't want anyone to undo all their good dieting work so serve up some delicious healthy treats.

Take some large green pitted olives and thread onto cocktail sticks with a slice of halloumi and any other small savoury food e.g pickled onion.

Serve up small slices of delicious wheat free breads, rye bread, soda bread etc with lovely spreads, hummus etc

Get some nobbys nuts in sweet chilli flavour..they are delicious! Serve up in little bowls.

Cut up lots and lots of cucumber, sweet peppers, carrot, celery etc arrange on a large plate around small bowls of homemade dips. You could also dip in homemeade grissini.

A nice hot snack that you could serve up are cheese and sweetcorn croquettes, delicious melted hot inside and crispy and breadcrums on the outside!

i don't know if because it's the end of the challenge you are all allowed to eat anything you want?
however,
do like a raw veggie & dip tray. those always go down well
and also a fruit plate.
you could do either wraps/sandwiches
or something like a meat & cheese plate?
several different kinds of salads ?
a tray with little squares on for dessert is also nice. just the bite sized ones so people can have something sweet without going overboard.

I have a few low cal recipes that I love.

This doesn't really have a name. Basically I slice English cucumbers, spread about a 1/2 tsp. of herb cheese (I believe the name is Alouette) on them and top with a small piece of smoked salmon.

Pasta Salad

1 box of tri colored pasta
1 bottle of low fat italian dressing

From here you can go crazy. I have added pepperoncini, olives, artichokes, olives, fresh broccoli, grilled chicken or shrimp, and/or cheese. Of coure not all of them at once. The only two ingrediets I always use are red onions and peppers. It is really good!

Make a huge healthy salad bar.Start off with the salad in a huge bowl, then the other ingredients to add to it.Put a basket with the crackers or French bread next, then a large basket with all fat free dressings to go on top.I would put fixings such as diced turkey,diced ham,bean sprouts,cucumbers,tomatoes,cantaloupe,red onion rings,grated cheeses,pickle spears,grated eggs.If it will be their lunch give them something filling to put on their salad.I would have Crystal Lite Lemonade,bottled water, coffee, or tea.I wish I could help set it up, its easier done than said.Good luck with it....

If you want to stay on the healthy side you can do a gourmet salad bar (grilled flank steak, turkey, various low cal dressings and lots of veggies). You could do fruit sald and yogurt and oatmeal cookies as a dessert.

Ok, this is just one snack you can add to the table:

97% fat free rectangle thin sliced ham. Drain on paper towel for thirty seconds. Spread fat free cream cheese on it(i know, it sounded gross to me when I heard, but it's not). Sprinkle garlic parsley, then roll it up really tight so it looks like a wienie. Freeze for 1 hour, cut into half inch pieces. Now you have these healthy fancy looking mini swiss rolls and they taste like candy!

well chances are that most of the people are sick and tired of eating all veggies all the time. So you have to have some fun with this!! Try serving things like, bbq chicken, (chicken wings too), pie, coffee/tea/soda, pasta. Just have some fun with the food!
