I am from Germany and a die-hard fan of India and Indian kitchen. Could you please give me a recipe for Laddoos?

I mean sweet and simple Laddoos.

Ingredients:
Makes 10 medium sized laddos.

Besan/ Gram flour- 1 cup
Ghee- 1/4 cup
Sugar- 3/4 cup
Broken cashewnuts- a handful
Dry copra grated- 1/2 cup

-> Take 1/2 a tsp of ghee and roast the cashewnuts till golden brown.Cool.
-> In a deep vessel or mixing bowl, combine the sugar, grated dry copra and the roasted cashewnuts. Keep aside.
-> Meanwhile, heat the remaining ghee in a non stick pan. Add the gram flour little by little and mix it in. The consistency at this point should be paste like and should drop easily from the spoon. If not, add more ghee tsp by tsp till you reach this consistency. Keep frying this mixture on medium flame till it turns golden brown and the aroma resembles that of mysore pak.
-> Take off the mixture from stove and mix it with the other dry ingredients using a spatula. The contents are very very hot at this point, so don't even attempt to put your hands in there. Leave this mixture till warm and then shape into laddos.

TIPS:
If you are a first-time sweet maker, a few things tend to go wrong but don't panic. I have just the ways to make it right for you-

- If the mixture turns out to be very greasy and hard to shape into balls, stick it into the refrigerator for about 15 mins and then try shaping them.

- If you forget to shape the laddos when warm and the mixture hardens, microwave it for a few mins till the ghee melts and then shape them.

Boondi Ke Laddoo
Another name for it is Motichoor Laddoo (Moti means bead or pearl in Hindi).

INGREDIENTS:
1/2 kg bengal gram flour
Enough milk to make a thick batter (use full cream milk)
1/4 tsp baking powder
4 cups water
1/2 kg sugar
1 1/2 tsps cardamom powder (made from green cardamoms)
10 strands saffron (optional but highly recommended)
3/4 cup finely chopped dried fruits - cashews, almonds, pistachios
6 tbsps milk
Ghee (recipe below) for deep frying (you could use vegetable/ canola/ sunflower oil but ghee gives tastier results)
Special equipment: A very fine metal sieve
PREPARATION:
Heat your oven for 10 minutes at 150 C/ 300 F/ Gas Mark 2 and then turn off. Keep the oven shut to contain heat.
While the oven is heating, put the 4 cups of water and the sugar in a deep pan and boil. As it boils scum will rise to the top. Skim this off with a metal sieve. The sugar syrup must be boiled till it reaches a one-thread consistency. To see how this is done, take a look at Making Sugar Syrup For Indian Desserts.
Once the syrup has reached the one-thread consistency, remove from the fire immediately, add the cardamom powder, stir and place the pan in the previously heated oven to keep the syrup warm.
Now put the bengal gram flour and baking powder in a large bowl and mix well.
Add a little milk at a time till you get a thick batter. Whisk to ensure all lumps are removed and the batter is very smooth.
Now heat the ghee on a medium flame till hot. Reduce flame a little.
Hold the sieve about 4 inches above the hot ghee and fill a ladle with the batter. Pour the batter into the sieve. Now use another spoon to gently press the batter through the sieve and into the ghee. It will fall like tiny drops/ beads - Boondi - into the oil! This is what gives the Laddoos their name! Press through all the batter you had put into the sieve like this.
Now fry the Boondi till they are a very pale golden colour. When done, drain, remove and put into a separate bowl. The fried Boondi should be cooked but not crispy.
Repeat till all the batter is used up.
Once all your Boondi is ready, coarsely crush about 1/4 of it with a fork. Add the finely chopped dried fruits, pour the warm syrup over all the Boondi and keep aside for 10 minutes. The Boondi will soak up the sugar syrup and soften.
While this is happening warm the 6 tbsps of milk very slightly and then soak the saffron strands in it.
After the Boondi has sat in the syrup for 10 minutes, pour this saffron milk (remove strands before pouring) over it. Mix well.
Now grease your hands lightly with some ghee and start forming the syrup-soaked Boondi into walnut-sized (or slightly larger) balls (Laddoo in Hindi). Press gently but firmly to bind the Laddoos together. Arrange as you go, on a lightly greased platter .
Allow the Laddoos to cool to room temperature before serving.
Boondi Laddoos can be made ahead of time and stored in a cool, dry place in an airtight container for about a week.

COCONUT LADDU (very easy recipe)

Ingredients:

1 can condensed milk
2 cups of dessicated coconut
1 tablespoon sugar

Method:

Mix the condensed milk and the coconut in a bowl.
Add the sugar and stir on a low flame for about 4-5 minutes. Set aside till the mixture has slightly cooled down. Shape into typical laddoos (small round balls). Roll each laddoo in a little dessicated coconut. Store in airtight jars in a refrigerator. Serve chilled and enjoy!

TIP: You can also a add 1 teaspoon of rose syrup to the mixture to give it a rosy flavor and a soft pink color to the laddus.

RAVA LADDU:

Ingredients:

6 cups semolina flour
7 cups white sugar
1 1/2 tablespoons ground cardamom
1/2 cup ghee (clarified butter)
1/3 cup cashew nuts
1 cup hot milk

METHOD:

Heat a large dry skillet over medium to medium-high heat. Add the semolina, and toast, stirring constantly. Stir in the sugar and cardamom while toasting until light brown and fragrant, about 10 minutes.

Heat a small amount of the ghee in a separate skillet over medium heat. Add the cashews, and cook until lightly toasted, about 10 minutes. Add the cashews to the semolina along with the remaining ghee. Gradually stir hot milk into the semolina until it is thick enough to pack into a ball. Remove from heat, and form palm-sized balls. Let cool and serve.

BESAN LADDU

Ingredients:

4 Cups Besan (gram/chickpea flour)
2 Cups powdered sugar
1 Cup ghee
Few cardamoms - powdered
Powdered cashews and other nuts as you wish.

METHOD:

Sieve besan. Roast it a bit and keep aside. Heat ghee and add besan to it and mix well. Cook till the cooked smell comes. Add the cardamoms and powdered cashews and other nuts. Let it cool a bit and then add the powdered sugar and mix well. Transfer into another vessel and let it cool just so much that you can shape it. Grease your palms with a little ghee while shaping into balls.

BOONDI LADOO RECIPE

Ingredients:

1 cup Besan
1 pinch Kesari
1 pinch Cardamom powder
1 tbsp Rice flour
1 pinch Baking Powder
1 tbsp Melon seeds
1 tbsp Broken Cashew nut
2 cups Oil Sugar
1 cup Water

How to make boondi laddu:

Mix the flour, rice flour, baking powder and colour.
Make a smooth thick batter. Heat the oil. Take the batter and pour it over a sieve with round holes.
Tap it gently with a spoon so that small balls of dough fall into the oil. Make the balls and keep aside. Heat the sugar and water till reaches 1/2 thread consistency.

Mix in the kesari melon seed and cardamom powder and fried boondies. When the mixture is still warm make into balls. Bondi Ladoo are ready to be served. If the mixture cools balls cannot be made as the sugar crystallizes.
