recessed lighting, or canister lights are tucked up in the ceiling, and point downward. what you're describing is accent lighting. accent lighting can be accomplished by. track lights, rope lights, small fluorescent lights, halogen lights, and even low voltage options similar to outdoor lighting, with a transformer.
the drywall fixture you refered to, is actually not a fixture, it's usually a site built frame-work of wood, similar to a cornice with an open top, that is drywalled in place. it could also be made of other materials.
one word of caution when choosing the light source, heat. some lights generate more heat than others, and could possibly become a source of ignition, due to their close proximity to the box around them.

Okay, "recessed lights" are sunk into the ceiling, shining down. I think what you may have are tract lights ( I don't know if I spelled it right). These are on a fixture that allows them to be adjusted to different distances apart.

i think you're talking about indirect lighting, you can't see the light source

a ledge, or a crown mold that is 4" away from ceiling, with a "rope light" dropped into it!

round plastic rope with lights in it ( Christmas light - too )!
