it's done with a generator,
the simple answer is the generator is a motor used in reverse...the windmill turns, this turns an axle, the axle turns a rotor, the rotor has magnets on it and spins next to copper coils the magnetics on the coils induces current...electricity is made

in a windmill system....
the turbine is connected to the generator (either AC or DC) through the system of gears as the speed to rotation of turbine is very less.
the generator is generally placed at the base of the windmill.
when the turbine moves under the action of wind action it causes the generator shaft to rotate. this induces voltage across the terminals of the generator and the electricity produced can be supplied to an individual load or electrical grid.
a dynamo is a DC shunt generator, the armature coils are placed at the rotor while the excitation is provided in the stator.
if the generation uses alternator (synchronous generator) then the excitation is provided with separately.

In laymen terms:
The wind rotates the blades of the fan. The fan is connected by a shaft to the turbine. Turbine rotates and this is coupled to a generator which generates electricity.

A dynamo is the term, name, for a D.C. generator.
Alternator is the term, name for a A.C. generator.
All you have to do is to connect the windmill to the shaft of either of the above generators.
