i made them two hours ago. the lemons were pretty old but still sour and had a bright yellow rind.

It could be the pan you used. Aluminum and acid from lemon or tomato's will cause your food to turn brown. Maybe use a glass dish or stainless. Just a thought..
Did you cook them to long? Maybe to high of a temp.

they bake(cook) !when you make shrimp for example when you peel it is Grey when it comes out done is and orangish pink!and they might be sour because you didn't fallow the recipe!
