I had a couple in Japan I had bought in a mini-mart. It seemed to have some mayo, ground pepper, chicken, thin slices of cucumber, and bit of other veggies. Has anyone heard of this? Or know the recipe? I've been craving it for MONTHS. Thanks.

Hum, I could tell you how I make it:
1 cup chicken breast, cooked & diced
1/2 - cup cucumber
1/2 - cup mayonnaise
2 - teaspoons lemon juice
1/4 - teaspoon salt
1/8 - teaspoon pepper
Italian bread or your favorite


Mix chicken, cucumber, mayonnaise, lemon juice, salt and pepper.
Spread the salad on the bread.

You can add, green peppers, tomato, olives etc.

Sounds like chicken salad sandwich. Place mayo in a large bowl,to make mixing easy,quantity of mayo & chicken would depend on the number of sandwiches you wish to make ,most of the ingerdients can be added according to what you prefer or how ,many sandwiches you are making,no hard & fast rules.Mix in cooked diced or shredded chicken, diced or shredded cucumber,seeds removed.
Vegetables of choice could include any or some of the following, bell pepper spring onions,cabbage,carrot,lettuce, .herbs like chopped parsley or mint,seasoning salt pepper-freshly ground,a few drops of lemon juice or vinegar,mix well & you have your sandwich spread.

Cook some chicken in something you like ie lemon and tarragon
Dice and drain any vegetable you like
Season
Add mayonaise to coat.

Split a roll or similar. Insert some salad leaves. Insert mix. Done. What could be simpler?

PITA BREAD SANDWICHES

1 (8 oz.) container soft cream cheese
2 tbsp. milk
1 c. chopped cooked chicken
1/4 c. chopped cucumber
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. dill weed
1/8 tsp. pepper
2 pita bread rounds, cut in half

Combine cream cheese and milk, mixing until well blended. Add chicken, cucumber, onion and seasoning mix well. For each sandwich fill pocket with 1/2 cup chicken mixture.

Most of what you describe is straight foreword, and if they are to be eaten straight away OK. If they are to be eaten later I would suggest you de-seed the cucumbers.
