The thing is with MMA though, you may not want to put on weight as much as you may want to add strength....but if you do in fact want to put weight on...then the above diet will do

There are a few regulars to this discussion board who're very brief-sighted. Just ask for his or her opinion of a special - any - martial artwork. Or approximately kata (types). And one in special has this thought that MMA is the tip-all-be-all of martial arts. So sure... there are lots of brief-sighted martial artists.

Your diet should include good fats, lots of protein, lots of carbohydrates, and 3 liters of water a day.
With the protein I would not get most of it from red meat because it tends to not be a very good source of protein. Some of the best sources of protein are beans, egg whites, legumes, and nuts.
For carbohydrates I would suggest you stay away from the bad carbs. Bad carbs tend to come from foods like cookies, cake, syrups, pies, soda, and white bread. Get most of your carbs from fruits and vegetables.
Healthy fats are good for keeping your cardiovascular system up to par. Keeping your cardiovascular system up to par helps with endurance!
Those good fats come from flax and salmon mostly. I get mine in pill form from walmart. Its called rexall Heart healthy Flax, Fish, Boragre Oil. I prefer this brand because it contains Vitamin E which helps preserve these good fats in the bottle and it includes all the different kinds of healthy fats.
Only one caution with the healthy fats, do not exceed 3 grams a day or it will have a reverse effect.
Every fighter, MMA or not, should be incorporating those healthy fats into their diet and not just for heart health.
As far as a work out goes I would do lots of cardio and core strength training.
Running in the sand is great for cardio as is the stair stepper. I prefer the stair stepper myself because its more of an intense workout.
For core strength training I would do push ups, reverse push ups on the bench or a chair, lunges, reverse crunchers, half crunchers, front walkout with the exercise ball, and back walk-out with the exercise ball.
Your diet should not change it should be the same everyday, but you can mix it up and varry it. Just remember to not change your diet, get your carbs and protein from the same sources, healthy sources.
As far as your work out goes you should do cardio every other day and strength every day after.

Fruits, veges, protein, carbohydrates, sun, running, pushups, pullups, swimming, and a good nights sleep. For martial arts you dont need the mass just endurance and quickness. Youll get the mass eventually. Just stick to it.

Get a Nintendo Wii. They really help with Exercise and it has lost me 10 pounds.
