Usually red bell peppers are "fire roasted" and can be bought in glass jars. I've never seen tomatoes fire roasted, but then, I haven't lookedin the gourmet stores for them.
I'd suggest you roast your own... quarter some plum (roma) tomatoes, toss w/ EVOO, salt, and pepper, and roast at 425ºF for 35-45 min until soft and juicy.

DO NOT ROAST TOMATOES AT 425*F for 30-45 minutes unless you want to clean up a horrible burned mess!!
If I were to fire roast tomatoes at home, I would take a 5x6 or beefstake or hothouse tomato, cut it in half width-wise, squeeze the seeds out and then lightly toss in olive oil, season with S&P and head directly outside to a preheated HOT grill. Leave on the fire until the skin blisters, transfer to your blender.... pulse until the desired texture is achieved.
Otherwise I see no problem with the first answer, just the length of time... try 10-15 minutes MAXIMUM at that heat.

You can buy fire roasted tomatoes in many supermarkets. They are in the canned food section. Though you may have to try your higher end markets to find them. But they are worth it. They have a smokey flavor regular canned tomatoes don't have. Good luck. Hope this helps.

I get my fire roasted tomatoes at Trader Joe's. I had a recipe that called for them, and someone told me TJ's had them. I never looked for them in any other store, so I don't know who might have them, other than TJ's.
The first reviewer suggested making your own, and I have done that before, but I added some chopped fresh basil and garlic, too... yum!

use a skillet put it on med. high and let roast evenly by turning the tomato-don't worry if the skin gets a little black/burnt that's what makes its taste. you can also do that with fresh jalapenos and garlic cloves and make a salsa que sale bien rico.
