sprinkle garlic powder and ginger powder, a tiny bit of salt & pepper on your pork cutlets, then coat them with plain flour, then dip them in egg and panko, deep fried the cutlets.
In this way, you season the pork and not the panko, the taste would be locked by the crispy cover.
Sever the pork cutlets with a bit of fresh lemon juice, wrcestershire sauce (or A1 or 76 sauce) & mayo with green salad or potato salad or coleslaw.

Panko rocks for a crispy exterior! Dredge in flour, dip in beaten egg, then dip in panko for the best breading.
I would save the dill for fish and veggie applications.
For pork there is nothing more classic than rosemary and garlic.
The best way to add the flavors is to season the flour. It's closest to the meat and won't fall off with any of the outer crumbs.
You could also try an Italian mixture with oregano, basil and thyme.

Well, I'm not a big fan of Panko, so I'd suggest switching to seasoned bread crumbs. But even if you leave it w/ Panko...
Thyme goes very well w/ pork... much better than dill, IMO. You may also add a little dijon mustard to your egg wash, or add some dry mustard powder to your breading mix. Mustard and thyme are very complementary to pork.
You could also try infusing your EVOO for frying w/ rosemary.... toss in a couple Tbsp. of dry rosemary and bring to a moderate heat. Remove rosemary w/ slotted spoon and then fry pork chops in this oil.

Why don't you try just browning them...you can add a little cumin...then bake them in the oven with pitted green olives (drained) and sliced white onions. In my opinion, pork is better slow roasted to help the flavors penetrate the meat. Another thing you might want to try is browning the pork, then roasting them in a pan with one mini-can of jellied cranberry sauce and two tablespoons of honey. OR...you could keep cooking them like you do, just add a really great spicy mustard sauce over the top to help enhance the flavor!! Good luck and hope this helps.
PS - Anytime you use soy sauce on pork, it's just gonna taste even saltier, though I do like the idea of adding a little garlic.

my Italian friend does them by marinating the whole meal in olive oil, garlic, basil and parsley for a couple of hours. Rubbing the marinate into the meat.
Then grill them but not too long, just put the point of a knife into the meat and if the juices run clear it is cooked. Let it stand covered for 5 minutes before serving. You can either grill your vegs at the same time or bake them in the oven. I like to do all in the one dish [marinating and cooking] at the same time - less washing up and mess -

Try browning the chops in a pan with rosemary and paprika, S&P.
In another pan, sautee some onions in butter until caramelized, then add cubed apples and a couple spoonfuls of brown sugar. Sautee them on low heat until the apples are soft. Spoon the apple mixture over the chops and enjoy!

Also, pork is delicious with applesauce or baked apples.

dont ever use olive oil with frying use vegtable oiland ur recipe is fine add a pinch of fresh nutmeg and a little bit of red pepper flakes then theyll taste fabulous
