Charcoal, since I have a charcoal grill. I've never had food from a gas grill, so I can't compare the two. Charcoal does give the food a nice flavor, however, I've unfortunately used some funking flavored charcoal that made the food kinda gross.

I prefer charcoal myself due to the flavor. I use Kingsford Match Light which is ready for cooking in 10 to 15 minutes without messing with the fluid. I own a gas grill also but use the charcoal grill more frequently.

I personally use charcoal when I grill because it seems to make my burgers and hot dogs taste so much better! I would also like to mention that when I have grilled steaks or boneless, skinless chicken breasts using charcoal,it really helped to bring out the flavor, and the meat was so tender and moist too!! ;-)

Its definitely the smoke that gives that barbecue flavor. If I walked into a barbecue restaurant and they were using propane in the back I would certainly raise an eyebrow. But there is a tradeoff between charcoal and propane. Charcoal certainly tastes better, but it takes longer to set up and is messier to clean up. Propane is quick to start and clean up, but lacks that flavor.
Bottom line, I will choose flavor over convenience any day of the week!

both, it depends on the food, and time I have......if you like the smoke, get one of the weber smoke boxes and you can insert wood chips to make your food more smoke like......this gives gas grilles more charcoal like tastes..

GAS! If I decide at the last minute to grill, I want to do it w/o having to worry about if I have briquets and how long they will take to turn white. Love my Weber gas grill!
