Lemon cake is my favorite. It's great with frosting. Just don't ruin it with canned frosting and cool whip!! YUCK!!

Here is a quick and easy recipe for lemon frosting that tops lemon cake!!

This frosting is best when used immediately but can be stored in the refrigerator, covered with plastic wrap, for up to two days. Stir frosting until smooth before using.

2 sticks and 2 tablespoons butter
9 3/4 cups confectioners' sugar
5 tablespoons milk
1/4 teaspoon salt
1 1/2 teaspoons lemon extract
1/2 cup lemon juice (about 2 lemons)

1. In a double boiler, melt butter. Remove from heat and stir in confectioners' sugar, milk, salt, lemon extract, and lemon juice. Return to heat and cook, stirring occasionally, for another 5 minutes. Do not melt the sugar.

2. Remove from heat; beat until cool and thick.

The wealthy style of a bittersweet chocolate will upload a zing to the lemon flavored cake for a uniquely flavored cake. Powdered sugar glaze or buttercream lemon icing is extra ordinarily used for lemon desserts. Perhaps you could like a lemon custard cake filling.

You can just sprinkle some powdered sugar over the top or use vanilla frosting. Plain is the best way in my opinion as long as the cake is not dry.

I would because I think frosting is the best part of a cake.

You can.... a simple but good one is a can of lemon frosting gently mixed w/ a thawed 8 oz. container of coll whip. Then spread b/t layers and all over outside. Yum! I think crushed Lemon Drops candy would be good on top as a garnish, myself....

I always use cool whip. It complements the tangy lemon very well!
