I need a recipe for bread, crackers, or pasta made with rice flour.
My son is allergic to wheat and I want to start making him foods that I dont have to worry about him eating!

Anyone have some good recipes?? Oh, and he is also allergic to dairy so I will have to substitute those things out too.

Rice Flour Banana Bread (wheat Free)
1/3 cup softened butter
2/3 cup sugar
2 eggs
3 tablespoons buttermilk
1 teaspoon lemon extract
2 cups brown rice flour or rice flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas
1 cup toasted coconut



1. Preheat the oven to 350 degrees.
2. In a large bowl, beat the butter and sugar until creamy.
3. Beat in eggs, one at a time.
4. Stir in buttermilk and lemon extract and mix well.
5. Combine rice flour, baking powder, baking soda and salt and add to the butter mixture.
6. Stir in bananas and coconut and mix well.
7. Spoon the mixture into two greased mini loaf pans (5 1/2 by 3 inches).
8. Bake 50 to 55 minutes, or until a wooden pick inserted into the center of the bread comes out clean.
9. Cool in pans 2 minutes, then turn out and cool completely.

Rice Flour Chicken (Crisp and Crunchy Batter)
1-1 1/2 kg chicken pieces
Marinade
2-3 tablespoons soy sauce
2 tablespoons honey
1 teaspoon five-spice powder
1 teaspoon crushed garlic
1 onion (chopped)
1 tablespoon sesame oil (optional)
Batter
2 cups rice flour
1 pinch salt
1-2 tablespoon baking powder
water


1. Make the soy sauce, honey, spice powder, garlic, onion and sesame oil into a marinade mixture.
2. Add the chicken pieces for at least 2 hours, but even better, overnight.
3. Mix batter ingredients with enough water to form a*thick* batter.
4. If not crunchy when fried add slightly more baking powder.
5. Dip marinaded chicken into batter and deep fry until cooked and golden brown.

There is a wonderful product made by Arrowhead Mills that is Gluten Free Pancake and Baking Mix. It is gluten free and wheat free. It is made with white rice floor and is so very delicious when used in place of wheat floor. I tried it for the first time last night and was an instant captive for its use in the future. You can contact them and they will give you recipes.

Try http://www.cookingbread.com. I eat Ezekial bread and it's pretty good. It doesn't have any flour. You can find it in the freezer section of most health food stores.

Oh honey! YOU HAVE MY SYMPATHY!

Can he deal with soy? Soy products include soy milk, cheeses, meats - you name it... I'm personally in love with Silk brand products, since I'm allergic to milk.
