By Stability ..it would be XP-Proffessional Service Pack-2
n mostly applications are supported in this version of XP
and if u r lookin for serverside version then media center ..(but it need some wht high configuration)

XP Pro, no doubt, has everything you need, and more

media center has a supreme lack of functionality, it wouldnt be suitable unless you were a 3 year old, and as for upgrading to Vista at this moment, iw ouldnt reccomend it, the bugs, price, and hardware requirements are all reasons to wait, a year, at least

Your question is a bit vague. For every day use, Media Center Edition would have to be the best.
I would reccomend trying out Vista Home Premium, though.
