I think the best thing you could do to get your girlfriend to understand your point of view is tell her why you want one.. research the different breed traits together... ask her what type of traits she wants in a dog...Maybe she doesnt know anything about Westies? Enlighten her...

Is it that she doesn't want a dog of any kind, or that she doesn't want a westie? If she just doesn't want a dog, give it a little time, go visit some friends that have some nice, friendly dogs and let her see how nice a pet dog can be. If she wants another breed besides a westie, find westie breeder who has some puppies. Take her over there and let her see the pups and see what cute dogs they are. Hopefully one will steal her heart and make her change her mind.

That depends. Why is she protesting?
Does she not like dogs?
Does she not like any animal in the house?
Is it the cost?
Does she prefer another animal?
Dogs live a long time. Is she protesting having to move some day and not being able to find a place that will allow it?
Does she worry about being free to just pick up and go without finding a dog sitter?
Is she allergic?
You can't set about convincing someone that something is a good idea if you don't know what their objections are to start with. Ask her, listen to her, then discuss it.

If you get one, get it from a westie rescue and tell her you are helping to save a homeless pet. Once you free up space by getting from a rescue they can then save a life from a Kill shelter.
Unless she just doesn't want a dog, this might impress her because you are helping save a life.

There's not. If she doesn't want a dog, then don't expect her to love it or take care of it too. Many times one person in a relationship wants a dog gets one, but ends up giving it up for adoption because the other person doesn't like it, want it etc. It's really sad.

What is she protesting? If she doesn't accept you and the dog, get rid of her.
