What is its history??

It is mentioned in the talmud (roughly 1600 years ago +) in connection with inspiring awe of God. How and when it developed into a custom which is observed universally by orthodox Jews I don't know. Explanations additional or in tandem with the one above are given as to remind of God or as a badge of pride. It is refered to as kippah yarmulka and kappel (pronounced as couple)

It's not the story... more like the idea behind it. It's to remind The Jew that he isn't the master of himself but that there is always someone above him that controls the universe.
A woman doesn't need to wear one because women are in much higher spiritual level than men and they don't need a constant reminder that there is a G-d in this universe.
You should know that it isn't a sin if a Jew doesn't wear one, it's more of a tradition that came to be.
I know I haven't answered your question but I don't know since when it became tradition... sorry

That is the hat they wear right? That symbolizes a covering too out of respect like priest and nuns wear head coverings, Muslim men and women wear head coverings...........you know what? A lot of religions cover their heads come to think of it.

Back in the day they believed that god lived up in the sky. It was deemed to be offensive to him to not cover your head. Who wants to look down and see a bunch of hair? In the presence of god you covered your head out of respect... that's it
