-2 cans canned chicken, or 1 package ready made chicken breast, or 1 lb homemade chopped chicken breast chilled
-2 stalks of diced celery
-1/4 diced onion (optional)
-3 or 4 TBsp mayonaise (low fat or fat free works)
-dash of salt and pepper to taste (optional)
-dash of mrs. dash (optional)
-fresh bread (of your choice = wheat, white, ect.)
-motzerella or american cheese (low fat or fat free works)
mix ingredients together and make the chicken salad. spread chicken salad on 1 slice of bread, put 1 slice of american or motzerella chese. close sandwich.
put in a no stick skillet, or grease a skillet in your method of choice and cook as if it were a grilled cheese.
that makes a chicken salad melt.

The beat ever- Boil chicken breasts. When they are done, cut into cubes. Add Mayonaise, onion, and celery. Also salt and pepper. Toast a French Baguette.Slice into Sub roll length. Stack Lettuce, Tomato and the chicken salad. YUMMY!!!!!
Also easy, Lasagna Casserole:
1lb ground meat, Beef, Turkey whatever you like
1small onion
Fry together with 2 cloves of minced garlic.
Boil, noodles, I prefer, curly ones like radiators, or any noodle with the ruffles on the edges.
Use your favorite jar of speghetti sauce, and add 1C. Ricotta cheese. Mix together and mix in meeat mixture. Pour over sauce. Pour all in baking dish and top with Italian cheeses. Bake 350 for 25 minutes. YUMMY!!

Easy chicken salad with a shouthwest taste
8 Servings
INGREDIENTS
2 boneless chicken breast halves, cooked and cubed
3/4 cup mayonnaise
1/4 cup chopped celery
chopped fresh cilantro to taste
1 (1 ounce) package taco seasoning mix
DIRECTIONS
In a medium bowl, combine the chicken, mayonnaise, celery, cilantro and seasoning mix. Mix well.
Cover bowl and refrigerate for 1 hour.

i get a chicken from the deli like rotisseri cooked eat that for supper then make salad with a little sweet pickle relish,some onion bits dehidrated ones and celery seeds portions vary depending on how much you have left ( chicken) and some mayo or salad dressing,,,,,,ok on the different ideas for supper just make some tacos from on of the rotisserie chickens i make salsa and just warm up some good corn tortillas ,,or take 2 flour tortillas put on on the skillet add chicken chopped add shredded cheese cook like grilled cheese ,keep an eye they cook real fast top with salsa, here are some other ideas

Try a half egg in the morning too or you will be really hungry, swap out the strawberry for a plum. If you don't want to be hungry as much you need fiber (plums, oranges, green apple, peas, peppers cucumbers tomatoes broccoli celery) and a bit of fat (eggs, chicken) in your diet. Other than that just calculate calories you need based on your current weight and eat less than that. Every 3500 less is a pound of weight, so 500 less a day will be a pound a week, 1000 less a day will be 2. As you lose weight you will need less food, so you have to recalculate every so often. NEVER eat when you are not hungry. So if you wake up and you are not hungry for breakfast yet, just save it til you are. Eat slowly even when you are hungry, preferably don't finish your meal in shorter than 20 min.

Exotic Chicken Salad
1 cup mayo
1½ tsp. curry powder
1 Tbsp. soy sauce
1 Tbsp. lemon juice (I have used lime, too)
Optional: ¾ cup Major Grey’s Chutney
4 cups chopped cooked chicken meat
1 (5 oz.) can sliced water chestnuts
1 cup finely chopped celery (about 2 stalks)
1 pound fresh seedless grapes, halved
1 cup toasted slivered almonds
1 (16 oz.) can pineapple chunks, drained
Mix first 4 ingredients together in large bowl w/ tight-fitting lid. Mix in chutney at this time, if so desired. Add remaining ingredients and toss gently. Refrigerate. Serves 8.

Bridesmaids' Luncheon Chicken Salad
1½ cups Hellman's Mayo
3/4 cup Major Grey's Chutney (if chunky, chop up)
1 tsp. curry powder
2 tsp. grated lime zest
¼ cup fresh lime juice
½ tsp. salt
In large bowl, combine above ingredients and mix well.
4 cups white meat chicken, cooked and cut into small pieces
3 (8 oz.) cans chunk pineapple, drained
2 cups diagonally-sliced celery
1 cup thinly sliced green onions, tops and bottoms
½ cup sliced, blanched almonds, toasted
1. Gently fold remaining ingredients into mayo mixture.
2. Chill at least 4-6 hours; can be made the night before. Toss before serving, being sue to get all the way to the bottom.
3. Serve on crisp, chilled salad greens.
Serves 8-10.

For simple chicken salad to spread in bread (the above are for fork-eating!), I simple roast or poach breasts, dice the meat up into ½" cubes, add some kosher salt and black pepper, and a dab of mayo. I usually mince a bit of celery for crunch, and if I have them, the green tops of green onions give a nice mild oniony flavor. Sorry, no measurements; just do it til it looks and tastes great!

canned chicken, chopped celery, chopped cucumbers, 1/2 cup of low fat sour cream, and 1/2 cup low fat hidden valley ranch SALT AND PEPPER TO TASTE..VERY GOOD as a sandwich or on bagel crisps as an hor derve.
boil broccoli and chicken together until both are cooked all the way through. grease a casserole dish with a light coating of olive oil. put oven on 400 degrees. once hot, sprinkle the chicken and broccoli with your favorite shredded cheeses, and then cook in the oven until the cheese is golden brown SOOOO YUMMY!

cook your chicken then pull apart into small pieces or use food processor to grind it up.
Mayo
sweet pickle cubes
salt and pepper
mix all of it together and you have a easy and tasty chicken salad. Serve on a bed of lettuce with crackers, or sandwich.
You can add celery and other things....but I hate celery

2 tablespoons fresh lemon juice
1/2 cup mayonnaise
1 teaspoon salt
1/2 teaspoon black pepper
3 1/2 to 4 cups diced, cooked chicken
1 cup celery, finely diced
Combine lemon juice, mayonnaise, salt and pepper; blend well and toss with chicken and celery.
Serve on bread, croissants, crackers, bed of lettuce, etc.
*To jazz up this recipe, add some chopped almonds (or any nut you like) and some chopped seedless grapes.

Cook chicken. Chill. Shred or dice. Add mayo to desired consistency. Add chopped onion and / or celery if you want. Salt & pepper to taste.
