What is the process used to make cottage cheese?

No, it's not curdled milk. That's yogurt.

Cottage cheese is milk protein. The liquids that come off once the protein has come together in chunks is called whey. Yep, little Miss Muffet was eating her curds and why (cottage cheese w/ the liquid still with it).

Incidently, cottage cheese is not a good source of calcium... the calcium goes off into the whey, so what's left is curds w/ no calcium.
