I have 2 Avacados that are soft because I didn't use them right away. Can I still make guacamole dip??

If they are very soft, they are probably too ripe to use for guac.

Pick a dark-colored Haas variet of avocado that is firm to the touch. Then you can aripe it on your own time. Hurry it along by placing next to bananas or apples on the counter, or in a paper sack.

This is my fave guac recipe:


Guacamole

4 ripe Haas avocados
3 tablespoons freshly squeezed lemon juice (1 lemon)
8 dashes Tabasco sauce
1/2 cup small-diced red onion (1 small onion)
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 medium tomato, seeded, and small-diced

Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl. Immediately add the lemon juice, Tabasco, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

I like the flavor of a Florida avacado vs. the Haas. If it has a slight give when you grab one it will be ready to eat for the next few days in salads, sandwiches etc. Some of the hard ones take forever to ripen.

yep. they are at their best when slightly soft. i cut mine up and mash with salt,pepper and vinegar to mayonaise consistancy, then put on turkey or chicken sandwiches with thin slices of tomatoes

Don't worry,the softer the better.It gives you a creamy dip,and that's what you want,don't you ?
