I usually sprinkle the juice of half a lemon or lime on my salad greens. Then I pour about 1-2 tablespoons of extra virgin olive oil. Season with salt and pepper and toss. You can also mix this up a bit buy substituting red wine or cider vinegar for the juice or add fresh herbs. I have also put a teaspoon of whole grain Dijon as well.

You can mix this in a separate bowl and pour over your salad but there is just something different about tossing the ingredients with the greens that makes it taste so good.

Use olive oil and lemon with a little honey and Horseradish mustard. As much as you want. You may have to just try it. Trial and error until you get the ingredient measurments just right.

Also, to the olive oil and lemon you can just add a little oregano, garlic powder and salt and pepper. This is very good too. Especially on a salad with chicken.

God Bless you and good luck on your diet. It is a tough thing to have to do. I am going through it too. With Gods help we can shrink! LOL

LEMON VINAIGRETTE

1 1/2 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Whisk together the mustard, lemon juice, olive oil, salt, and pepper to make a vinaigrette.

To reduce the fat content, you can sub a bit of water for some of the oil.
