Brining imparts a flavor into whatever meat is placed into to add to the tenderness of the meat as well as to enhance the flavor. The most common brining liquid contains sugar, water, salt and sometimes an herb. The amount of time required for brining varies but some people brine for at least 24 hours. During the Thanksgiving holidays, I usually brine my turkey ahead of time in a styrofoam container for 24 -36 hours in a mixture of apple cider, kosher salt, and rosemary. The end result is a succulant turkey!

Brining is a popular method for improving the flavor and moisture content of lean meats like chicken, turkey, pork and seafood.

Historically, brining has been used as a method to preserve meat. Meat is soaked for many days in a very strong saltwater solution with the addition of sugar, spices, and other ingredients. This curing process binds the water in the meat or removes it altogether so it's not available for the growth of food-spoiling microorganisms.

With the advent of mechanical refrigeration, traditional brining became less popular for food preservation, but is still used today in the production of some meat products.

Brining is a salt liquid mix that can be combined with things like vinegar, spices, garlic, onions etc..to help intensify flavors in food. Meats that are brined will always turn out juicier and much more flavorful, things like veggies are usually brined with vinegar and salt and it becomes a pickling process ie: cucumbers become pickles
