Raspberry Truffles
15 Servings
INGREDIENTS
1/2 cup evaporated milk
1/4 cup sugar
1 (11.5 ounce) package milk chocolate chips
1/4 cup seedless raspberry preserves
1/2 teaspoon instant coffee granules
3/4 cup finely chopped toasted almonds (You Can Sub Pecans If You'd Like)
DIRECTIONS
In a heavy saucepan, combine milk and sugar. Bring to a rolling boil over medium heat; boil and stir for 3 minutes. Remove from the heat; stir in chocolate chips, preserves and coffee until mixture is smooth. Chill for 1 hour. Roll into 1-in. balls; roll in almonds. Place on waxed paper-lined baking sheets. Chill until firm. Cover and store in the refrigerator.

Here are a few recipes for you to look at. I haven't tried them yet but both have received great reviews.
RASPBERRY TIRAMISU CUPS
2 servings - (would need to double or triple for the number of people that you would be serving)
Coffee Cream
250 g mascarpone cheese
15 ml Kahlua
30 ml strong brewed coffee
2 teaspoons white sugar
Raspberry Sauce
20 fresh raspberries
75 ml water
1/4 cup white sugar
20 ml Amaretto
5 ml lemon juice
Biscuit Crumbs
4-5 lady fingers crumbled
ground pecans
To Serve
fresh raspberries
powdered chocolate milk mix
To make the raspberries sauce, bring the water to a boil in a small saucepan.
Add as much sugar as will dissolve into the water, then add the Amaretto and lemon juice.
Just before it starts to boil, add the raspberries, and stir it over a high heat until the liquid takes on the color of the raspberries.
Reduce the heat, and simmer until most of the liquid has evaporated.
Strain the raspberry mixture over a small bowl to get rid of the seeds.
Place the mixture in a small bowl, cover tightly, and place in the fridge.
To make the coffee cream, simply combine the cheese, Kahlua, and coffee in a bowl, and stir until the mixture is uniform in color.
Add sugar to taste, if necessary.
Combine the biscuits and ground pecans .
Once the raspberry sauce has cooled, arrange the three components in layers in a martini glass, with the biscuit crumbs on the bottom, raspberry sauce in the middle, and coffee cream on top.
Refridgerate until the coffee cream is firm.
Decorate with powdered chocolate, and place a raspberry on top.
CAPPUCCINO CHEESECAKE WITH PECAN SAUCE
6-8 servings
Filling:
3 (8 ounce) packages cream cheese, softened
1 3/4 cups firmly packed dark brown sugar
4 large eggs
2 tablespoons strong coffee
Sauce:
1 cup firmly packed dark brown sugar
1 cup whipping cream
1/2 cup butter
1/4 cup strong coffee
2 tablespoons coffee-flavored liqueur or strong coffee
1 cup pecan halves
Topping:
Whipped Cream
Pecans
Fresh Raspberries
Heat oven to 350 degrees F.
In large bowl, beat cream cheese and 1 3/4 cups brown sugar until smooth. Add eggs; beat until well blended. Add 2 tbsps coffee; blend well. Pour into crust.
Bake at 350 degrees F for 45-50 minutes or until edges are set and golden brown (center will not appear set). Cover edge of crust with strips of foil after 15-20 minutes of baking to prevent excessive browning. Cool, then refrigerate until thoroughly chilled and center is set, about 2 hours.
Sauce: In medium saucepan, combine all sauce ingredients except pecans. Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer 5 minutes, stirring occasionally. Stir in 1 cup pecan halves. To serve, pour warm sauce over each serving. Garnish with whipped cream, pecan halves, and raspberries.

Brew some coffee, then combine the coffee with the raspberry and pecans in a blender. Then, add this to an ice cube tray and place toothpicks in each tray opening....Voila: coffee-raspberry-pecan popsicles.

I would try a tiramisu, which is an italian coffee cake and then maybe drizzle it with a raspberry sauce and sprinkle with pecans.
