The entree was made with a light cream sauce that contained snow peas,walnuts and thinly sliced red and green peppers..A very good dish to get that daily allowance of fiber and veggies...I mainly want a recipe for making the ravioli,but if anyone has a similar sauce recipe also,that'd be great!! Thanks for the help!!

There is a butternut squash tortellini w/ browned butter sauce on the foodtv.com website - Giada DeLaurentis (sp?) - made it and it is easy to find - I made it last Friday and it was FANTASTIC!!! Probably not very "lite", though.

a million butternut squash a million clove garlic (non-compulsory) a million tsp cinnamon Salt & beaten black pepper Preheat oven to four hundred levels. Using a strong knife, reduce off the highest of the butternut squash close the stem, then reduce the butternut squash in part lengthwise. Scoop out seeds and membranes. Halve once more, making 4 wedges. Place wedges reduce part up in a gigantic glass baking dish. Rub garlic at the surfaces. Sprinkle cinnamon, salt & pepper on most sensible. Cover in foil and roast for 35 minutes, dispose of foil & go away to brown for yet another 10. Scoup the flesh out and position in a soup pot with the garlic. Add adequate water to hide, deliver to a boil. Remove from warmness & with a hand held blender blitz until gentle. Bring again to a boil, stirring most commonly until it is your prefered consistency. I eat the squash ravioli LC nearly every day for lunch!
