Anyone know any recipes with papayas? Perhaps any smoothies, fruit salads, or anything else? Thanks :)

Papaya-Lime Sorbet - Recipe

INGREDIENTS
8 cups peeled, seeded, and diced ripe papaya
1/2 cup water
1/2 cup sugar
1/4 cup “lite” coconut milk, divided
2 tablespoons lime juice, divided
1 teaspoon lime zest, divided
2 pinches salt

1. Freeze papaya overnight in a single layer on a baking sheet lined with wax paper or parchment.

2. In a small saucepan, combine water and sugar and bring to a boil over high heat, stirring constantly, until sugar is dissolved and mixture is syrupy, about 4 minutes. Pour the syrup into a glass measuring cup and allow to cool 15 minutes. While syrup cools, remove papaya from freezer and allow to defrost.

3. Place half the frozen papaya in a food processor. Add half the syrup, 2 tablespoons of the coconut milk, 1 tablespoon of the lime juice, 1/2 teaspoon lime zest and a pinch of salt. Pulse twice, then process until smooth, pausing to scrape the sides and stir as necessary. Transfer to a serving bowl, then repeat process with remaining ingredients, adding them to the serving bowl when smooth.

4. Serve immediately or freeze until ready to serve.

Serves 8.

Infused Papaya Milk

Chop some papaya chunks put them in a small bowl. Pour some whole milk to fill the bowl. Put the bowl in a slow cooker that is filled with a little water (not too much, otherwise boiling water will flow into the bowl and you don't want that). Cover the bowl with a lid of some sort. Cook on high for 4 hours. Serve hot.

p/s: make sure your bowl is thick and strong, preferably ceramic or china.

Papaya Fritters

Papaya can be eaten when unripe (green) or ripe (yellow-orange), hot or cold and as a vegetable or dessert. A slightly unripe papaya, whose skin is greenish-yellow or greenish-orange is best for making Papaya Fritters.


Ingredients:

* 1 cup self-rising flour
* ½ cup milk
* 1 egg, beaten
* 1½ tablespoons sugar
* 1 cup papaya, peeled and cut into cubes
* Oil, for deep fat frying

Method:
Combine flour, milk, egg and sugar. Then, stir in papaya. Do not use an electric mixer and do not over mix. Drop by teaspoonfuls into hot oil.
Cook 1 to 2 minutes on each side or until golden brown. Drain on paper towels. Fritters can also be cooked on a grill, similar to a pancake. Serve hot as a snack or side dish for a meal.

3. wrap in banana leaves or tinfoil if youre short on the above.

1 cup cooked or canned black beans
2 ripe papayas, peeled, seeded and diced small
1/2 red bell pepper; diced small
1/2 green bell pepper, diced small
1/2 red onion, diced small
3/4 cup pineapple juice
1/2 cup lime juice (about 4 limes)
1/2 cup chopped cilantro
2 tbsp ground cumin
1 tbsp minced red or green chile pepper of your choice
Salt
Fresh cracked black pepper


Instructions
In a large mixing bowl, combine all the ingredients and mix together well. This salsa will keep, covered and refrigerated, 4 to 5 days.

This Caribbean-inspired salsa is great with grilled fish. It is also very good by itself, as a spicy summer-salad-type course.

Yield: about 2 cups
