Tortilla Soup
Ingredients:
1/4 bunch cilantro, well washed (leaves only)
2-3 garlic cloves
1/2 small onion, chopped
1 small can of green chilies
6 cups chicken stock/broth
1 (14.5 ounce) can tomatoes
1 tsp. ground cumin
1 tsp. salt
2 tbsp. cornstarch dissolved in a small amount of water
Corn tortillas (about 10) cut into thin strips
vegetable oil
1-2 cups cooked chicken (2 oz. per serving)
Monterey Jack cheese (1 oz. per serving)
1-2 avocados, peeled, pitted and sliced
Prep:
Puree cilantro, garlic, onion, chilies, and tomatoes in a blender or food processor. Heat stock and add pureed mixture into cumin and salt. Bring to a boil, reduce heat and simmer about 1 hour. Stir dissolved cornstarch into stock.
Fry tortillas in oil until crisp; drain well. Add chicken to stock and garnish with shredded cheese, tortila strips, avocado, sour cream, salsa, or whatever else you prefer.

I like to serve corn grits on the side of my quesadillas. ( I make mine with chicken and Jalapenos, so the corn is sweet to kind of set off the flavors)
If it is just plain cheese in them, I am thinking maybe a guacomole, salsa, sour cream and chips to start off the night. Followed by the Quesdillas and a serving of black beans. The final course would be flan for the girls night. If you have a torch you could make creme brulee instead. That will give some different flavors and a little spice for everyone through out the meal. Hope this helps. Enjoy!
Have you thought about Hot tamale balls. They are made with Chili powder, cumin, ground beef, pork and cornmeal. Then soaked in a tamato based sauce. You can serve them just as you would meatballs at a cocktail party. Let me know if you want the recipe. Spelling_Sara@yahoo.com Enjoy!

First, you should serve several toppings and dips for the quesadillas. Quacamole, Sour Cream, and Salsa are great. Also, you could place some diced tomato, and shredded lettuce with them. Keep the toppings separate so that people can make their own.
As for side dishes, you should serve some Mexican Rice or Yellow Rice (which you can make easily from an Uncle Ben's box that you find in the market. Refried Beans (available in a can) also good with the quesadillas, and you could even use this as a topping.
If you want to, you could even serve Margheritas!

I always make Chicken Quesadillas & Cheese Bread.
Quesadillas: Mix shredded, cooked chicken with a Taco Seasoning Packet & some water as directed on the packet. Lay a shell in a skillet on medium heat. Sprinkle some Colby Jack cheese on the bottom shell, some taco chicken next and more Colby jack cheese on top. Finish off with another shell and immediately flip with caution. (2 min on second side). The cheese on each side holds the quesadilla together.
Cheese bread; Split a loaf of Italian bread lengthwise. Spread softened butter (we like a lot of butter, bad for you or not), on the bread. Sprinkle with garlic powder (or rub fresh garlic on the bread prior to spreading the butter), Italian Seasonings gets sprinkled next and top with lots and lots of motzarella cheese. Bake until cheese is melted and a little brown. Use a pizza cutter to cut the quesadillas into wedges and also to slice the bread into 2" or 3" pieces.

Pico De Gallo and Chips , And a Taco Salad
Ingredients
* 6 medium Tomatoes diced
* 1 medium Onion diced
* 1/4 cup fresh Cilantro chopped.
* 2 to 4 Fresh serrano or jalapeño seeded and minced
* garlic powder just a pinch * Salt to taste
Put all ingredients in a bowl add 1/2 cup of cold water, mix well. Let set a few minutes. You will find a lot of recipes in this site, where we can use the pico de gallo for cooking and a garnish.
Taco Salad
1lb ground turkey browned add 1 pkg lawrys Taco Seasoning and 1 small can tomatoe sauce simmer for 5 minutes, and set in fridge to cool.
Then cut up 2 tomatoes, 2 avocados, 1 bunch green onions, 1 can kidney beans strained , 1 cup of sharp cheddar shredded, 1 pkg lettuce in a bag the small one 1 lb bag, then mix all together throw in the meat and break up a bag of Doritos Nacho Cheese 7 ounce size and mix in salad and add 1 small bottle krafts 1,000 island dressing , then enjoy . :)
For Dessert you can pick up a Tres Leche, or a Dolce Leche Cake ... And make some strong coffee and have that with Kalhua and Cream...

Try serving them with a green salad and apple slices. For some reason, cheese and apples always go good together, and you can't go wrong with salad! Try setting out different dressings to go along with the salad, and fun toppings for the apples. Try caramel, yogury, or walnut pieces. It should be a hit!
