We have deleted the PDF software from our computer but still when I use Microsoft Word and try to save a document I have to go through a bunch of "PDF-File Open PDF" before I can actually see the complete drop down "File" menu. Any ideas as to why or how I can delete those PDF-File Open PDF line items?

You can disable all Word add-on's. Search the help function for. You may also try to repair microsoft office from the setup utility. You may have to run office update after doing this, and you also may require your original install CD.
