I have great aim but for some reason, the ball just doesn't seem to stop on pitch/chip type of shots. Am I supposed to hit the ball on the inside of the club or something? help!

For short shots, imagine you're throwing the ball unto the green underhanded. You would never throw the ball across your body and it's the same thing here. Use an open stance with the ball set back by your right foot (if you're right-handed). The ball should have a nice soft arc to the green.
Don't break your wrists.

I'm not good at golf, but I'm going to guess you're not following thru on your pitch/chip shots. I've seen a lot of people do this -- they try to stop the club at the point where it hits the ball, like they just want to slap it or something. The ball goes where it is supposed to, but it keeps going, because it doesn't have the backspin that it needs to stop. The ball just bounced off the face instead of rolling off it, so no spin.

I play fairly regularly and have found that on the shorter pitch/chip shots you 1) open your stance a little 2) play the ball back in your stance and 3) open the club face a little (in order to maintain your intended ball flight.) Try this , then give me best answer.
p.s. if you're not a divot taker this will help your ball check up, but it will rarely draw back.
