Teriyaki Sauce is supposed to be sweet
Ingredients
1/4 cup tamari soy sauce (soy sauce)
1 cup water
fresh grated ginger (about 1 Tbs. or to your taste)
3 tablespoons brown sugar
1 minced garlic clove
2 tablespoons cornstarch
1/4 cup cold water
Combine 1 cup water,tamari,brown sugar and garlic and ginger in a saucepan and bring to a boil,stirring constantly.
Dissolve corn starch in 1/4 cup of cold water and add to sauce.
Stir constantly to allow the sauce to thicken.
If the sauce is too thick add a little water or tamari to thin.

Genuine Hawaiian Teriyaki Sauce:
20 min 15 min prep 4 servings 1 2 cups
1 cup soy sauce - (LEE KUM KEE)
1 cup sugar
1 teaspoon grated ginger, very fine
1 large garlic clove, minced
3 scallions, chopped fine
1.) Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar.Remove from heat and add remaining ingredients.
2.) Let cool and store in a glass jar in refrigerator.
3.) A light inexspensive soy works well for this just make sure it is real not one with caramel coloring as an ingredient.Tamari is a bit too heavy for this though will work in a pinch.
4.) I use my parmasean cheese grater to grate ginger comes out well that way.
5.) This is also great on noodles,tofu,vegetables,added to stir frys besides grilled meats and burgers.

Teriyaki Sauce - Homemade:

1 cup soy sauce
1 quart unsweetened pineapple juice
1 tablespoon garlic powder
1 tablespoon ground ginger
1 tablespoon dry mustard
1 teaspoon white pepper
1/2 cup brown sugar
1. Place all ingredients into a blender and let it go for a few minutes, until well blended Store in the refrigerator.

INGREDIENTS
3 cups soy sauce
1 1/2 cups mirin (Japanese sweet wine)
1 orange, juiced
6 ounces chopped fresh pineapple with skin
1 Granny Smith apple, cored and chopped
2 cloves garlic
1 teaspoon grated fresh ginger root
4 tablespoons white sugar, divided
DIRECTIONS
In a saucepan, combine soy sauce, mirin, orange juice, pineapple, Granny Smith apple, garlic, ginger, and half of the sugar; bring to a boil. Reduce heat, and simmer 20 minutes. Adjust sweetness to taste with remaining sugar. Strain through a fine mesh sieve; cool.
