it used to be superstition that anyone who got something from the bride would have good fortune in finding a mate (thus who catches it gets married next)
People used to chase the bride and groom to try to take something form her (like pieces of dress etc.) so brides got smart and threw their boquet to distract the people.

also it considered good luck at finding a mate if you stole the brides stockings so people would try to steel them as well, the garter was used to hold up the stockings and brides would throw the garter to distract them as well. thus comes the garter toss.

The luck of the bride also comes in with the someting new, old, borrowed, and blue. the something borrowed is suposed to be something from a bride with a successful marriage so that the luck would be passed on to the new bride.

From what I have looked up, this is what I found. The bouquet is tossed comes from the custom the bouquet is the modern day alternative to the old tradition of the "tearing of the wedding dress". In days gone by, single ladies would tear a piece of the brides dress for good luck. One only can imagine the fate of the brides gown at a large gathering! Thus the tossing of the bouquet is the modern alternative that allows the bride's gown to remain intact. It should not be forgotten that the lady who catches the bouquet is the next woman to be married. Rice and wheat symbolize fertility, prosperity, and bounty. Today guests throw rose petals, potpourri, wheat, millet seed and birdseed. Showerig the newlyweds in bubbles or releasing birds, butterflies and ringing of bells replace rice today.

Its a tradition, who ever catches it will be the next one to get married the same reason for the groom to toss the garder..

There's no sense keeping it - at that time of the night, the flowers have pretty much bitten the dust. Whomever catches it will be married next.
