I read it was supposed to be served room temperature, but I'm just wondering what would be better to preserve it? Should I put it in the fridge or leave it out?

Think about what is inside it. Aren't some of those things stored in the refrigerator?

Put it in the refrigerator and take it out an hour before you want to serve it.

Fridge that dip! It doesn't take very long for anything with sour cream to go bad...serving the dip at room temp is fine if you've made it within an hour or two but store any leftovers for safety's sake!

Put it in the fridge. Bacteria can grow after 2 hours and get you very sick. If you are using leftovers, take the portion you want to eat out of the main dish, set it on the counter for 15-30 min then eat. Discard any unused. Do not re-refrigerate because every time you take it out and put it back in, you are introducing it to bacteria.

I think it's best to refrigerate it overnight and then bring it to room temperature [for about 30 minutes] before serving ;o)

Refrigerate it until about one hour before serving It might still be cool, but it will be good and about the right temperature.

Is this the 7 layer dip made with sour cream (refrigerated), beans (room temperature), lettuce (refrigerated), tomatoes (room temperature), cheese (refrigerated), olives (room temperature) and meat (refrigerated)?

Yeah...leave it out.

By all means, refrigerate it. It will grow bacteria and make you sick if left out overnight.
