I have hung a new door on an old door frame. the hinge side is plumb, but the latch side tapers in by about 2cm toward the bottom, so their is a considerable gap toward the top of the door when it is closed.

I have yet to fit the architrave. Can I use this to create some kind of optical illusion perhaps?

To clarify - it is the frame that tapers, not the door.

either cut pieces or wood to fill the gap to bring top in or lumber yard has wood wedges lay inside space between casing and wall put one on top in opposite directions tap together until gap is what you want between door and casing put a finishing nail through door casing and wedges into stud to hold them in place.

If by architrave, you mean the moldings around the door frame? You should be able to shim the door frame in to fit the door. If not, then remove the trim on the latch side and shim. A good rule of thumb is to have the space between the door and frame be the thickness of a nickel. Allows paint and leaves good margin. Use shim shingles [wood] available at any home center.

You need to plumb that side of the jam. Take off the casing on one side to expose the jam. with a pry bar or the claw of the hammer pull the top of the jam out till it is plumb. Shim the jam to that position and re-nail. Put the casing back up. You may have to take the casing off the other side of the jam, but try it with just one off first.

Take that side of the door frame out and replace it would be the best way to do it. Not alot of work, or expense, unless there are variables I am unaware of.
