Shortening is typically used in baking, so you have to be very precise.

Get a set of stackable plastic measuring cups (as opposed to the Pyrex 3 cupper).

Scoop the shortening out of the container with the appropriate cup.

Level it off with a knife to get your exact amount.

If you have a big tub of shortening and say you need a half a cup. Get a 2 cup wet-measuring cup (for wet stuff) and fill it with 1 1/2 cups of water. Then add shortening to it until it reaches the 2 cup line. Then you will have 1/2 cup. That is the clean way to get the shortening. Otherwise, just use a dry-measuring cup (for like flour and sugar) and scoop the amount you need into it and then use a rubber spatula to scoop it out of the cup. It will be messier, but you will get what you need.

No equipment required. Roughly calculate the proportion of shortening as a fraction of the pack and cut it with a knife. Quite near enough.
