I like to make spaghetti with ground turkey...
Brown and drain the turkey meat, and then prepare the sauce the same way that you would prepare regular spaghetti with meat sauce. It tastes almost identical to beef, and is much lower in fat!

You can use ground turkey in almost anything you would use ground beef in. I have a really good meatloaf recipe I came up with using ground turkey:
1 lb. ground turkey
1 lb. turkey Italian sausage
1 egg
1 (8 oz.) can tomato sauce
1 pkg. dry onion soup mix
1 cup dry oatmeal (quick or regular)
Mix all together, put in a greased loaf pan. Bake at 350 degrees for about an hour. Drain, let stand for a few minutes before slicing.
I get TONS of requests for this recipe when people have tried it - enjoy!

I find that ground turkey can be dry so you want to use it in a recipe that has liquid in it. My personal favourite is for taco meat. Just cook the turkey in a pan with some garlic onions and peppers then add a can of diced tomatoes (yes canned) with out draining them, the juice give good flavour and much needed moisture. Then add a taco seasoning mix that can be purchased in little pouches at almost any grocery store. There you go taco meat, great on a tortilla or in a salad...don;t forget the sour cream.

Turkey burgers are GREAT! But have to season them well and be extra careful not to overcook them.
You can substitute ground turkey in your meat loaf too, but know you'll need to add lots of great things to add flavor and cream or stock to add moisture.
Here is another favorite:
Untidy Samuels
Probably more widely known as Sloppy Joes, these can be made with ground beef or ground turkey. This homemade version is light years ahead of anything you can buy in an envelope or can, and really just as easy. I like to serve these with paper-thin slices of red onion.
Ingredients
1 teaspoon vegetable oil
1 lb. ground beef or ground turkey
1 medium yellow onion, peeled and chopped fine
1/2 cup best-quality ketchup
1/2 cup best-quality chili sauce
2 tablespoons Worcestershire sauce
1 teaspoon coarse salt
freshly cracked black pepper
1/3 cup water
6 sesame seed topped hamburger buns, warmed
Method
Brush a skillet with oil and warm over moderate heat, 30 seconds. Add beef [or turkey] and onion and sauté 10 minutes, stirring frequently. Add all remaining ingredients [except buns] and simmer, uncovered, 10 minutes. Spoon mixture between split buns and serve immediately.

I have just jumped on the ground turkey wagon and I use mine in chili, tacos, spagetti, and burgers. I made turkey burgers that turned out GREAT a few nights ago. This is what I did.
Ground turkey
yellow onion chopped
mushrooms, chopped
pepperjack cheese, cubed in 1/2 inch pieces
salt
pepper
poultry seasoning
ground cumin
onion powder
garlic powder
fresh parsley
I mixed the turkey, onions, mushrooms and cheese together, adding a dash of each seasoning as I went. I threw the parsley in last. Form patties and drizzle each side with EVOO before you grill. I grilled them for 4-5 minutes on each side and them topped them with some shredded pepperjack cheese and baby spinach with a little mayo on the bun. They were great AND they heated up well the next day too without drying out.

Turkey Chili
1 tbsp. vegetable oil
1 medium onion, chopped
1 medium red bell pepper, chopped
2 celery stalks, thinly sliced
1 lb. ground turkey
4 cloves of garlic, minced
1-2 tbsp. chili powder
1 28-oz. can of crushed tomatoes
1 15-oz. can of black beans, drained
1 tsp. dried oregano
1 can corn (optional)
In a large soup pan, cook onion, pepper, celery, and turkey in oil until turkey is cooked through. Add garlic and cook 1 minute. Add tomatoes, beans, and oregano, and stir well. Bring to a boil, reduce heat and simmer partially covered for 20 minutes, stirring occasionally. Add corn and simmer for 10 more minutes. Serves 6.

The thing that you need to remember with ground turkey or chicken is that it will drys out quickly. I make great turkey loafs and burgers by adding mushrooms, baby spinach, eggs, bread crumbs and other ingredients. It depends on if you want an Italian, Asian, Indian, Tex-Mex flavor. Use the ethnic spices and vegetables to make it unique. Have fun and enjoy!

I make everything with it, especially Pirogi. But because it's lower in fat than ground beef, it takes longer to cook on a stove, but it cooks quick on a bbq grill.
Have this after wards, Holly:Lime Raspberry Cream Pie
1 small box sugar..free instant vanilla pudding mix
1 small box sugar.. free lime gelatin
2/3 cup dry milk powder
1-1/3 cup water
1 cup cool whip free
1-1/2 cups fresh red raspberries
6 oz. shortbread pie crust
Lime slices for garnish
In a medium bowl, combine the dry pudding mix, gelatin, and milk powder. Add the water and mix well. Blend in 1/4 cup of the cool whip free. Reserve 8 raspberries. Fold the rest into the pudding mixture. Spread into the pie crust. Spread remaining cool whip free over the top. Top with lime slices and 8 raspberries and chill. Cut into 8 servings.

I use ground turkey for everything you can use ground beef in. I make turkey burgers, tacos, meatloaf, hamburger pie, spaghetti, taco salad, and so many other things.
Turkey is so much better for you and tasty!

Sorry for the pun. But once you taste this turkey meatloaf recipe you'll forget about using ground beef. Because it uses ground turkey instead of ground beef this meatloaf has far fewer calories. It's about half the calories of a beef meatloaf. But this turkey meatloaf is twice as good!
The-Perfect-Present.com Turkey Meatloaf Recipe
This meatloaf recipe is nothing fancy but it's one of my favorite ground turkey recipes. It's just delicious. I give you the ingredients for three different sizes. We usually make the 3 lb. size because people tend to eat a lot. 1 lb. 2 lbs. 3 lbs.
Preheat the oven to 350°F.
Ground Turkey
(I prefer Shadybrook Farms) 1 lb. 2 lbs. 3 lbs.
Eggs (Large) 1 2 3
Hot sauce. I use a mild hot sauce. My favorite is a brand called Sharkey's (scroll down for picture) but it can be a little hard to find. If you are using regular hot sauce you might want to cut this back by at least half. This is especially true if you are serving the meat loaf to children. You can always add more to taste later. 1 tbsp. 2 tbsp. 3 tbsp.
Worcestershire Sauce
(I use Lea and Perrins) 1 tbsp. 2 tbsp. 3 tbsp.
Adobe Seasoning (Scroll down for picture) 1 tsp. 2 tsp. 3 tsp.
Vidalia Onion - Diced 4 ozs. 8 ozs. 12 ozs.
Extra Virgin Olive Oil (EVOO) 1 tbsp. 2 tbsp. 3 tbsp.
Bread - either white or whole wheat 2 slices 4 slices 6 slices
Put the ground turkey and all other ingredients except the bread slices into a large bowl.
Wet the slices of bread with water and then gently squeeze out the excess. Then pinch small pieces placing them in the bowl. It is not necessary to remove the crust. This is the secret to an unbelievably moist meatloaf!
Mix thoroughly.
Place mixture in appropriate size baking dish.
It's difficult to say precisely how long to bake your meatloaf since it depends on the dish you're using, your ovens characteristics, etc. I bake the 3 lb. meatloaf, covered, for 1½ hours and then check to see if it's done. You want it to be done but don't overcook it. You want it to be moist.
Remove from oven and let stand for about twenty minutes.
One variation you can try is to mix in some chopped spinach or other "healthy vegetable". Your kids never see it coming and they gobble it right along with the meatloaf. Sneaky, huh?
