Blacken 2 whole chillies over the flame,wrap them in cling-wrap,when cold remove wrap,remove black ash and seeds.Chopp finely 2 chillies
1oz capers
2oz gherkins
sprigs of cilantro
Mix with 250ml of mayonnaise
