I would really hope that you would pick Christianity. The facts are really interesting because though their are many stereotypes of what Christianity is, you will be surprised to discover how factual and interesting the religion is. This is the only religion that states that you cant get to heaven by being a good person but that you receive God's gift of salvation through Jesus Christ. Check it out for yourself, the facts will blow you away regarding history.

I'm certain that there will be some people here who would be more than happy to help you out. R&S has people from all different 'ologies' around, including none. Depending on what you choose you may want to use the word 'belief' or 'faith' or 'philosophy' Some questions I'd think about asking:
** Does your belief include a higher power / supreme being? What is the nauture of his/her/its interaction with you.
**have there even been human incarnations / versions of your deity?
**Do you have to do anything special to join/belong?
**Are their books/literature/doctrine written down?
It could be an extremely intersting project.
Blessings,
Zimmi

I'm assuming this is an assignment for school...
Are you allowed to use the internet to do your interview? I'll bet you'd get a lot or responses here once you picked a religion that you wanted to know about. You'd probably even get quite a few offers from people who would be willing to be interviewed.

I would start by looking the different religions you see mentioned on here and which ones you know little about. Then I would search out a way to talk to someone of that religion.
