why is it so darn spicy?? It smelled so good cooking, and I took a big ol bite of it and WOW it's spicy. I don't like spicy things and my palate is sensitive to hot. Is all Zatarain's rice spicy like that or just the dirty rice?

Zatarain's is cajun so it will be spicy.
That brand is way overpriced. Recipes for stuff like dirty rice, red beans and rice are pretty easy so you can cut back on the spices when you prepare them.

Not all zatarain's varieties are spicy. Though I didn't find their dirty rice terribly spicy but I love spicy foods. Why not "dilute" it with more rice?

I like to make the dirty rice and then add strips of beef then eat that on tortillias. But I do agee with adding extra rice to the mix to help dilute it. Or try adding other stuff to make it less spicy.
