Unfortunately, there are a couple of catches. First of all, I'm pretty health conscious. Second of all, if my 3 and 4 yr old won't eat it, it doesn't do me any good.

Crunchy Beef Rissoles

Ingredients:

450 gm (1 pound) beef mince
1 small can water chestnuts, drained and chopped
1 large garlic clove, finely chopped
1 rounded teaspoon stock powder
2 cups quick cooking oats
1 egg, beaten
1/4 cup tomato sauce
1/2 teaspoon salt
Pepper to taste

Method:

Mix all ingredients well. Form into 8 patties. Cook over low heat in a non-stick pan for about 45 minutes to an hour, turning half way through cooking.

If you don't have a non-stick pan use a fry pan with a very small amount of oil in it.

I cook meat rissoles very slowly. Faster cooking can produce rissoles which are well done on the outside but raw on the inside.

Well, I had lots of great suggestions until I see the "catches". When you said your pretty health conscious, all my ideas went down the toilet.

We are just the opposite of you. I fed my kids hot dogs in mac & cheese, eggs & bacon & sausage for breakfast and pizza, burgers and pasta for supper.

Sorry for answers that are not helpful, but I figured that once I was at the answer your question section, why turn back, I'd just answer you whether it was what you wanted or not!

Oh, we also ate lots of "butter soup". Not what you think, it is Mrs. Grass noodle soup in a box, extra thin noodles added and tuna salad mixed in. Did I forget to mention the butter? Yes, LOTS of butter to make it creamy!

I don't know but what it might be 'soul' food but here goes: Fried potatatoes and onions. It's time your toddler got some good old-fashioned down home victuals...I mean vittles.
Peel and (very-thinly) slice the potatoes, fry these 'til slightly crisp on one side.
Slice a round onion into eighth inch thick slices then in butter or oil cook the onion only 'til caramelized.
Combine the two ingredients...and...Bon Appetite!

What country?
I suppose kids like a healthy chicken/veggie curry if it's not too spicy.
I kids also like fun sushi rolls with brown rice, seaweed, and tuna (cheap). Add a little viegar to the cooked rice.

Sprinkle some olive oil, garlic, salt and pepper on fresh zucchini and eggplant slices, throw in the skillet. Three min each side.
